{"id":27681,"date":"2015-09-15T00:30:46","date_gmt":"2015-09-15T04:30:46","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=27681"},"modified":"2015-09-14T22:55:41","modified_gmt":"2015-09-15T02:55:41","slug":"indian-spiced-chicken-and-spaghetti-squash","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/09\/15\/indian-spiced-chicken-and-spaghetti-squash\/","title":{"rendered":"Indian-spiced Chicken and Spaghetti Squash"},"content":{"rendered":"<p>Have you noticed ALL the squash at the grocery store (even more abundant, probably, at your local farmer&#8217;s market)? \u00a0Oh, h-a-p-p-y me! \u00a0This week there were quite a few small-ish spaghetti squash&#8230;so I snatched up 3 of &#8217;em! \u00a0They are the perfect size for a meal for two (and some leftovers). \u00a0Spaghetti squash, as most of you know I am sure, is a really good substitute for traditional spaghetti&#8230;minus most of the carbs. \u00a0Here is some<a href=\"http:\/\/www.newhealthguide.org\/Spaghetti-Squash-Nutrition.html\" target=\"_blank\"> nutrition info<\/a> for spaghetti squash. \u00a0This fits in so well with our &#8216;<em>healthy but oh-so-yummy<\/em>&#8216; POV.<\/p>\n<p>My husband Robert&#8217;s favorite rendition of &#8220;spaghetti squash and&#8230;&#8221; is with Italian spaghetti sauce and meatballs. \u00a0But me&#8230;I am not a huge fan of so much liquid being dolloped over top the prepared spaghetti squash. \u00a0So this is what spaghetti squash #1 became&#8230;. \u00a0The &#8216;warmth&#8217; of the garam masala, the cumin, and turmeric spices added so much to fairly flavor-less ground chicken and spaghetti squash. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff6600;\">Indian-spiced Spaghetti Squash<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.40.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-27689\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.40.38-225x300.jpg\" alt=\"2015-09-14 20.40.38\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.40.38-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.40.38-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.40.38-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span><\/p>\n<p>small (2#) spaghetti squash<br \/>\n1 pound ground chicken (or turkey)<br \/>\n1 tablespoon + 1 teaspoon coconut oil (or extra-virgin olive oil)<br \/>\n1 small sweet onion, diced<br \/>\n1\/2 teaspoon cumin<br \/>\n1 teaspoon turmeric<br \/>\n1 tablespoon garam masala<br \/>\n1\/2 teaspoon sea salt<br \/>\n1 teaspoon freshly ground black pepper<br \/>\n2 teaspoons minced garlic<br \/>\n10-12 ounce package frozen chopped spinach, defrosted and squeezed dry<br \/>\nhandful (or two) of cherry or grape tomatoes, halved<br \/>\n1 cup frozen peas<br \/>\n1\/2 cup chicken broth (or water)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span><\/p>\n<ul>\n<li>cook the spaghetti squash (wash the skin off first). I usually just microwave it&#8230;in 5 minute increments \u2018til the outside is softened and a sharp knife easily pierces the skin. (there are a number of other methods, click this<a href=\"http:\/\/lowcarbdiets.about.com\/od\/cooking\/a\/spagsquash.htm\" target=\"_blank\">\u00a0link<\/a> for some suggestions.) when done, set aside &#8217;til cool enough for you to scoop it out<\/li>\n<li>in a large saute pan, add 1 T of the oil and heat over medium heat<br \/>\nadd the ground chicken and cook, stirring occasionally, for 8-10 minutes; remove from pan and set aside&#8230;season w\/s&amp;p<\/li>\n<li>add the diced onion to the pan (and additional 1 tsp of oil, if necessary); <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.15.50.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-27690\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.15.50-225x300.jpg\" alt=\"2015-09-14 20.15.50\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.15.50-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.15.50-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-14-20.15.50-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a>saute for 5 minutes or so<\/li>\n<li>reduce heat and then add the seasonings and the garlic; continue to cook, stirring constantly, for another 3-4 minutes to allow flavors to blend together<\/li>\n<li>then add the spinach, halved tomatoes, and peas; stir to combine. \u00a0pour broth evenly over top; cover the pan and simmer \u2018til broth has been absorbed (just a few minutes).<\/li>\n<li>meanwhile, using a fork, scrape out strands of spaghetti squash; season well with some additional s&amp;p. \u00a0pile up in serving bowl to make a nest of the \u2018noodles\u2019; top with meat mixture (NOTE: if spaghetti squash has gotten cold, place in a small saute pan along with a pat of butter and gently heat)<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p>God loves you! <span style=\"color: #ff6600;\">\u00a0\u2665\u00a0\u00a0<\/span>(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff6600;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Have you noticed ALL the squash at the grocery store (even more abundant, probably, at your local farmer&#8217;s market)?
