\u00a0It was love at first bite.<\/p>\n<p>This is really my first time doing anything with these little guys, and I still have a \u00a0lot to learn. \u00a0They turned out tangy, crunchy, and delicious&#8230;and make me want to experiment more with them. \u00a0So, if you like a good cheese plate, add some of these offbeat pickles and keep everyone on their toes!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Pickled Okra<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large clamshell small fresh okra (between 1 and 2 pounds)<\/li>\n<li>2 cups water<\/li>\n<li>2 cups white vinegar<\/li>\n<li>1\/2 cup salt &#8211; use Kosher\u00a0if you have it<\/li>\n<li>6 cloves garlic, peeled and smashed<\/li>\n<li>1 tablespoon mustard seeds<\/li>\n<li>1 teaspoon dried dill<\/li>\n<li>2 tablespoon sugar<\/li>\n<li>2 chopped hot peppers, or 1 teaspoon dried pepper flakes (optional)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Prepare the okra: \u00a0wash them and trim the tops. \u00a0You still want a little stem left, but not too much &#8211; I think between 1\/4 &#8211; 1\/2&#8243; inch is good.<\/li>\n<li>Make the brine: \u00a0Add the rest of the ingredients to a large pot and bring to a boil.<\/li>\n<li>Pack the cleaned and trimmed okra into pint jars for canning. \u00a0First make a layer that point\u00a0up, with the stems on the bottom. \u00a0Fill the jar with more okra, pointing down with the stems facing up, and jam them in there. \u00a0Depending on the size of the okra and how tight you pack them in, this will fill 2 or 3 pint jars.<\/li>\n<li>When the brine is boiling, pour the brine over the okra. \u00a0Make sure to spoon in the garlic cloves and spices &#8211; don&#8217;t waste that flavor!
