\u00a0(I&#8217;d love to hear your suggestions in the comments below!)<\/p>\n<p style=\"text-align: left;\">Here&#8217;s the other thing about this recipe (besides fitting perfectly into our <strong>healthy but oh-so-yummy<\/strong> POV!) &#8212; really quick and so easy! \u00a0 Enjoy!<\/p>\n<p style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<\/p>\n<p style=\"text-align: left;\">1\/2 cup quinoa<br \/>\n1 cup water<br \/>\n1 <em>humongous<\/em> (or 2 medium) zucchini<br \/>\n1\/4 teaspoon (each) sea salt, freshly ground pepper<br \/>\n1\/2 tablespoon extra virgin olive oil<br \/>\n12-16 ounces italian seasoned<em><strong> chicken<\/strong><\/em> sausage (sweet or hot)<br \/>\n1 small red onion, diced<br \/>\n2 tablespoons of minced garlic<br \/>\n1 teaspoon dried marjoram<br \/>\n1 cup halved grape or cherry tomatoes<br \/>\n4 tablespoons (or more) shredded mozzarella or Monterey Jack cheese<br \/>\n2 tablespoons freshly grated Asiago (or Parmesan) cheese<\/p>\n<p style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li style=\"text-align: left;\">get the quinoa going right away (cook according to package directions)<\/li>\n<li style=\"text-align: left;\">cut the <em>humongous<\/em> zucchini in half lengthwise (if needed, cut a thin slice off the bottom to get them to sit firmly); \u00a0scoop out the pulp, leaving a 1\/4&#8243; shell<\/li>\n<li style=\"text-align: left;\">put the zucchini boats on a microwave safe plate, season with s&amp;p, and microwave on high for 3-4 minutes, &#8217;til just tender. \u00a0place the zucchini onto a broiler-safe pan<\/li>\n<li style=\"text-align: left;\">chop the scooped out zucchini into 1\/2&#8243;-sized chunks; set aside<\/li>\n<li style=\"text-align: left;\">heat the olive oil in a large saute pan over medium-high heat<\/li>\n<li style=\"text-align: left;\">add the sausage, onion, and zucchini chunks; cook for about 5-6 minutes (&#8217;til there&#8217;s no pink left), breaking the sausage into bits as it cooks<\/li>\n<li style=\"text-align: left;\">reduce heat to low; add the garlic stirring constantly for 1 minute<\/li>\n<li style=\"text-align: left;\">toss in the tomatoes and marjoram; stir to combine and turn the heat off<\/li>\n<li style=\"text-align: left;\">preheat the broiler of your oven and place a rack in the top position<\/li>\n<li style=\"text-align: left;\">(when quinoa is done) combine with the sausage-veggie mixture<\/li>\n<li style=\"text-align: left;\">scoop into the zucchini boats and sprinkle with the mozz or monterey jack<\/li>\n<li style=\"text-align: left;\">place under broiler &#8217;til the cheese is melted, 1-2 minutes<\/li>\n<li style=\"text-align: left;\">plate and sprinkle the grated Asiago or Parm over top<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #008000;\">\u2665 \u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665<\/span><\/p>\n<p>God loves you!<span style=\"color: #008000;\">\u00a0\u00a0\u2665\u00a0\u00a0<\/span>(Please don\u2019t\u00a0<em><strong>ever<\/strong><\/em>\u00a0forget that!)<\/p>\n<p><span style=\"color: #008000;\">\u2665\u00a0\u00a0<\/span>coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>{hu\u00b7mon\u00b7gous} (h)yo\u035eo\u02c8m\u00e4NG\u0261\u0259s,-\u02c8m\u0259NG-\/ huge; enormous; extraordinarily large Yup&#8230;that describes the two zucchini that have been (literally) \u00a0hanging out on our kitchen counter for a while now. \u00a0What to do&#8230;what to do&#8230;what to do with them; I think I have asked myself this almost every day for a week. \u00a0So, this is what I did.
