\u00a0I find the easiest way to accomplish this is to keep the ingredients on hand for these few meals.<\/p>\n<p>This recipe is a good example. \u00a0The frozen shrimp is a standard in our freezer (oh&#8230;the possibilities!). \u00a0Mushrooms and onions are always on hand, too&#8230;and any fresh green veggie (broccoli, for example) would work well, too. \u00a0Everything else is pretty much a pantry staple. \u00a0Be sure to generously season this dish as you go along&#8230;and taste just before serving to add more, if needed. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\">Shrimp, Pasta and Veggies<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/08\/2015-07-22-20.53.05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-27064\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/08\/2015-07-22-20.53.05-225x300.jpg\" alt=\"2015-07-22 20.53.05\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/08\/2015-07-22-20.53.05-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/08\/2015-07-22-20.53.05-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/08\/2015-07-22-20.53.05-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span>:<\/strong><\/p>\n<p>2 tablespoon extra virgin olive oil, divided<br \/>\n2 tablespoons butter, divided<br \/>\n1# large raw shrimp, peeled and cleaned<br \/>\nlemon pepper seasoning<br \/>\n10 ounces mushrooms, sliced<br \/>\n1 small sweet onion, chopped<br \/>\n1 medium zucchini, sliced in half lengthwise, then into half moons<br \/>\n2 tablespoons minced garlic, I use jarred<br \/>\n1-1\/4 cups chicken broth (I subbed in white wine for 1\/4 of broth)<br \/>\n8 ounces dry spaghetti<br \/>\n1\/2 cup freshly grated parmesan cheese<br \/>\n1\/4 cup packed basil, chopped (or 2 teaspoons dried basil)<br \/>\njuice from 1\/2 lemon<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span><strong>:<\/strong><\/p>\n<ul>\n<li>heat 1 tablespoon olive oil in a large saute pan over medium heat<\/li>\n<li>pat shrimp dry then season on both sides with lemon pepper seasoning<\/li>\n<li>add to pan, \u00a0saute until pink on both sides and just barely cooked through, less than 2 minutes per side; set aside in a separate bowl<\/li>\n<li>add remaining tablespoon of olive oil and 1 tablespoon butter to pan along with mushrooms and onions. \u00a0saute \u2018til mushrooms are golden brown, 7-8 minutes; then add zucchini and cook \u2018til veggies are just turning tender<\/li>\n<li>add garlic and season with additional lemon pepper seasoning; stir continually for about 1 minute \u2018til garlic is aromatic<\/li>\n<li>pour in chicken broth then turn heat up to high and boil \u2018til broth has reduced by approximately 1\/2<\/li>\n<li>meanwhile, bring a large pot of salted water to a boil; add spaghetti and cook according to package direction &#8217;til just al dente (spaghetti will cook a bit more in the sauce). drain and set aside<\/li>\n<li>once broth has reduced, turn heat to medium low; then add basil, lemon juice, and remaining 1 tablespoon butter; stir to combine<\/li>\n<li>add pasta and veggies to sauce; \u00a0toss to coat the pasta w\/ sauce and distribute veggies<\/li>\n<li>finally add shrimp and parmesan cheese; toss \u2018til combined<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff99cc;\">\u2665 \u00a0 \u00a0 \u2665 \u00a0 \u00a0 \u2665 \u00a0 \u00a0 \u2665 \u00a0 \u00a0 \u2665<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #ff99cc;\">\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff99cc;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>During the summer months, I like to have a few healthy but oh-so-yummy meals in the rotation that are quick to prepare, don&#8217;t heat up the kitchen (and the cook!), but are still delicious and satisfying. \u00a0You, too?
