{"id":26897,"date":"2015-07-24T00:30:24","date_gmt":"2015-07-24T04:30:24","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=26897"},"modified":"2015-07-23T22:32:47","modified_gmt":"2015-07-24T02:32:47","slug":"plum-and-basil-upside-down-cake","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/07\/24\/plum-and-basil-upside-down-cake\/","title":{"rendered":"Plum and Basil Upside-Down Cake"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Plum-Basil-Upside-Down-Cake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26898\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Plum-Basil-Upside-Down-Cake-300x225.jpg\" alt=\"Plum Basil Upside Down Cake\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Plum-Basil-Upside-Down-Cake-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Plum-Basil-Upside-Down-Cake-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I \u00a0hadn&#8217;t really planned on baking a cake today. \u00a0But every Friday, I need to have a post up for you fine ladies, and sometimes&#8230;{sigh}. \u00a0The kids are acting crazy, work is busy, the husband has to work late&#8212;you know how it is. \u00a0So, you make all the family favorites for dinner because it&#8217;s easy and you don&#8217;t have to think about it.<\/p>\n<p>This week, however, I was really stumped. \u00a0I looked in my fridge: \u00a0I had a LOT of plums to deal with that were edging toward soft. \u00a0I also have a basil plant in my front yard that I&#8217;m <em>in love with! \u00a0\u00a0<\/em>I am plucking off leaves daily and trying to find new uses for it. \u00a0Well, I did a Google search for &#8220;plums and basil&#8221;&#8230;and guess what came up? \u00a0This <strong>Plum and Basil Upside-Down Cake<\/strong>!<\/p>\n<p>It was easy to make and, while not instantaneous to whip up, I could still do it in steps&#8212;in between washing dishes, or folding some laundry. \u00a0 You don&#8217;t <em>need<\/em> the basil in this recipe, but it adds a lovely complexity to the flavor and elevates it from being just another sweet cake. \u00a0If you don&#8217;t have plums, use nectarines or peaches &#8211; both taste great with basil.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Plum and Basil Upside-Down Cake<\/strong><\/span><\/p>\n<p>(<a href=\"http:\/\/powerhungry.com\/2008\/08\/plum-basil-upside-down-cake\/\" target=\"_blank\">click here<\/a> for the original recipe)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/4 cup plus 2 teaspoons butter, divided use<\/li>\n<li>1 pound large plums &#8211; any kind, or peaches or nectarines &#8211; pitted and quartered (about 6 plums)<\/li>\n<li>1 1\/4 cups sugar, divided use<\/li>\n<li>1\/2 cup packed fresh basil leaves, roughly chopped<\/li>\n<li>1 1\/2 cups whole wheat flour (or use regular flour)<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>2 eggs<\/li>\n<li>3\/4 cup buttermilk (I used plain yogurt instead)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Melt 2 teaspoons butter in a large nonstick skillet over medium heat. Add plums, and cook for 3 minutes. \u00a0Add 1\/2 cup sugar, basil, and a pinch of salt. \u00a0Cook for 10 minutes or until plums are tender, stirring frequently. \u00a0Remove plums from pan using a slotted spoon. \u00a0Bring cooking liquid to a boil. \u00a0Cook 5 minutes or until liquid is very thick, like jam. \u00a0Strain liquid through a sieve to remove basil.<\/li>\n<li>While the liquid reduces, arrange plums in the bottom of a 9-inch cake pan (I used square, but the author recommends round) coated with cooking spray. \u00a0Pour the liquid over the plums. \u00a0Let cool. \u00a0(I actually reserved about 3 tablespoons of the liquid for another use &#8211; read on!)<\/li>\n<li>Preheat oven to 350F*. \u00a0In a medium bowl, whisk together the flour, baking powder, and salt. \u00a0In a separate bowl, beat the remaining 1\/4 cup butter and remaining 3\/4 cup sugar with an electric mixer until fluffy. \u00a0Add one egg at a time, beating well.
