{"id":26651,"date":"2015-07-10T00:30:46","date_gmt":"2015-07-10T04:30:46","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=26651"},"modified":"2015-07-08T19:06:08","modified_gmt":"2015-07-08T23:06:08","slug":"basil-shrimp-scampi","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/07\/10\/basil-shrimp-scampi\/","title":{"rendered":"Basil Shrimp Scampi"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Basil-Shrimp-Scampi.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26652\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Basil-Shrimp-Scampi-225x300.jpg\" alt=\"Basil Shrimp Scampi\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Basil-Shrimp-Scampi-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Basil-Shrimp-Scampi-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/07\/Basil-Shrimp-Scampi-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>I&#8217;m not much of a gardener, but this year I&#8217;ve managed to keep some basil and rosemary plants alive long enough to eat from them. \u00a0Basil is so fresh and summery that I love to add it to lots of different dishes. \u00a0This week I made <strong>Basil Shrimp Scampi<\/strong> and it was delicious!<\/p>\n<p>I like to peel my shrimp before cooking them. \u00a0You could use whatever shape pasta you like for this recipe, but I found plain old spaghetti works great. \u00a0This recipe served four, with some leftovers, so tell the family dinner&#8217;s ready!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Basil Shrimp Scampi<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 pound spaghetti, undercooked just a bit &#8211; don&#8217;t go past <em>al dente<\/em><\/li>\n<li>1 stick butter<\/li>\n<li>3 cloves garlic, minced (or use 2 tablespoons minced garlic from a jar)<\/li>\n<li>1\/2 cup white wine or champagne<\/li>\n<li>juice of 1\/2 lemon<\/li>\n<li>1 pound shelled shrimp (31-40 size is best)<\/li>\n<li>salt and pepper<\/li>\n<li>2 fistfuls of fresh basil, chiffonaded<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Cook the spaghetti according to the directions on the package. \u00a0Do NOT overcook!<\/li>\n<li>While the spaghetti is cooking, make the sauce: \u00a0melt the butter over medium-low heat and add the garlic. \u00a0Stir to combine, then add the wine and lemon juice. \u00a0Simmer until bubbly.<\/li>\n<li>Increase heat to medium and add the shrimp. \u00a0Cook for about 3 minutes, then flip each shrimp and cook for another two minutes. \u00a0Season with lots of salt and pepper.<\/li>\n<li>Pour the shrimp and sauce over the pasta and toss to combine. \u00a0Add in the basil and toss again. \u00a0Save a few tiny basil leaves to garnish the pasta.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; I&#8217;m not much of a gardener, but this year I&#8217;ve managed to keep some basil and rosemary plants alive long enough to eat from them. \u00a0Basil is so fresh and summery that I love to add it to lots of different dishes. \u00a0This week I made Basil Shrimp Scampi and it was delicious!
