\u00a0(A pescatarian is simply someone whose diet does not include meats or poultry but does include fish.) \u00a0Seafood and fish are just so much more to my liking lately than meat. \u00a0This eating lifestyle falls easily into our healthy but oh-so-yummy POV since it&#8212;for the most part&#8212;is high protein, low fat. \u00a0As with meat, it is important to purchase the highest quality fish that your budget can afford.<\/p>\n<p>This recipe is really quick to put together! \u00a0And it is on the lighter side&#8230;making it a nice choice for the warmer summer months. \u00a0And, cooked on the stovetop&#8230;not the oven&#8230;will keep the kitchen (and the cook!) cooler. \u00a0We enjoyed this with tilapia fillets but it would be great with cod or flounder or sole&#8230;or even shrimp! \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #808000;\">Mediterranean Olive Topping for Fish<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-02-18.21.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26325\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-02-18.21.38-225x300.jpg\" alt=\"2015-06-02 18.21.38\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-02-18.21.38-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-02-18.21.38-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-02-18.21.38-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span><\/p>\n<p>4 teaspoons olive oil, divided<br \/>\n1 small red onion, cut into half moons<br \/>\n8 ounces baby bella mushrooms, thickly sliced<br \/>\n2 cups grape tomatoes, halved<br \/>\n1 heaping tablespoon garlic, finely minced<br \/>\n1\/2 cup pitted green olives with juice, halved<br \/>\n4 skinless tilapia filets (approximately 4 ounces each)<br \/>\nlemon pepper seasoning<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span><\/p>\n<ul>\n<li>heat 2 teaspoons olive oil in large saute pan over medium-high heat<\/li>\n<li>place onion pieces in pan and saute for 3 minutes or so, \u2018til starting to soften<\/li>\n<li>add mushrooms in a single layer and cook, without stirring, for about 5 minutes \u2018til they begin to brown on one side<\/li>\n<li>stir and make sure each is flipped over; cook about 5 minutes more \u2018til other side is browned, too<\/li>\n<li>add tomatoes (cut-side down) and heat for another 3-4 minutes<\/li>\n<li>reduce heat and add garlic, stirring gently for just one minute<\/li>\n<li>remove from heat; season w\/lemon-pepper seasoning, and stir in green olives; remove to a separate bowl and keep warm<\/li>\n<li>using the same pan, heat remaining 2 teaspoons olive oil over medium heat<\/li>\n<li>season the fish with sea salt &amp; lemon pepper seasoning on both sides and place in the pan<\/li>\n<li>cook for 3-4 minutes \u2018til nicely browned, gently turn and cook another 2-3 minutes&#8217; don&#8217;t overcook!
