{"id":26205,"date":"2015-06-09T00:30:54","date_gmt":"2015-06-09T04:30:54","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=26205"},"modified":"2015-06-08T14:10:39","modified_gmt":"2015-06-08T18:10:39","slug":"raspberry-lemon-cookie-cups-paleo-dairy-free-gluten-free","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/06\/09\/raspberry-lemon-cookie-cups-paleo-dairy-free-gluten-free\/","title":{"rendered":"Raspberry-Lemon Cookie Cups (paleo, dairy-free, gluten-free)"},"content":{"rendered":"<p>We recently celebrated the birthday of one of my favorite people in the whole world&#8212;my daughter, Kassia! \u00a0She continually inspires me with her healthy eating lifestyle. \u00a0She endeavors to feed her loved ones (and the rest of us!) with the best quality foods she can find. \u00a0So I wanted to {attempt} to do likewise for her. \u00a0This healthy but-oh-so-yummy dessert is one that she had mentioned looked good* &#8230;and it was!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-07-15.48.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26206\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-07-15.48.38-300x225.jpg\" alt=\"2015-06-07 15.48.38\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-07-15.48.38-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/2015-06-07-15.48.38-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>These cookie cups are raw&#8230;but could also be baked if you prefer. \u00a0They have no refined sugar in them, nor any dairy, and are also gluten-free. \u00a0They fit perfectly into a paleo-style eating plan, too! \u00a0And they are vegan! \u00a0 They are very delicate, though&#8230;so keep the shells refrigerated &#8217;til just ready to serve them. \u00a0Then pipe (or scoop) the delicious filling into them, top with a lucious fresh raspberry&#8230;and serve.<\/p>\n<p>So, next time you find yourself needing to find the perfect dessert that meets the dietary needs &amp; wants of your guests&#8230;try this! \u00a0We thoroughly enjoyed them. \u00a0Hope you do, too!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"font-family: 'Comic Sans MS', sans-serif;\">Lemon-Raspberry Cookie Cups<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/raspberry.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26207\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/raspberry-246x300.jpg\" alt=\"raspberry\" width=\"246\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/raspberry-246x300.jpg 246w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/raspberry-300x365.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/06\/raspberry.jpg 304w\" sizes=\"auto, (max-width: 246px) 100vw, 246px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<\/p>\n<p>2 lemons, zested and juiced (you will need the zest from both along with 1 tablespoon of juice)<\/p>\n<p><em>cookie cups<\/em>:<br \/>\n1 cup almond flour<br \/>\n1\/2 cup coconut flour<br \/>\n2 tablespoons 100% maple syrup<br \/>\n2 tablespoons coconut oil, room temperature<br \/>\n2 teaspoons pure vanilla extract<br \/>\n1 tablespoon lemon juice<br \/>\n1\/2 of the lemon zest<br \/>\npinch of salt<\/p>\n<p><em>raspberry filling<\/em>:<br \/>\n2 ounces freeze-dried raspberries<br \/>\n1 can (14 ounce) coconut cream, full fat variety<br \/>\n1 teaspoon sweetener of choice (I used maple syrup)<br \/>\n1\/2 teaspoon pure vanilla extract<br \/>\n12 perfectly ripe raspberries<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<p><em>cookie cups<\/em>:<\/p>\n<ul>\n<li>line a standard size (12) \u00a0muffin tin with plastic wrap (this is a little tricky and will shift around a bit; that is expected<\/li>\n<li>zest and juice the lemons; set aside<\/li>\n<li>place all of the ingredients for the cookie cups in your \u00a0food processor.<\/li>\n<li>pulse &#8217;til well-blended and the mixture starts to come together<\/li>\n<li>use a 1-1\/2 inch or 2 inch cookie scoop (about 2 tablespoon size) and \u00a0divide the mixture up into the lined muffin tin<\/li>\n<li>gently press mixture into each cup along the bottom and about halfway up the sides.
