This week I have a recipe for a delicious, light Fruit Crisp featuring some of these great in-season produce. Our featured ingredient(s) this week are peaches and cherries!!!\u00a0 Here are a couple of links to the\u00a0 nutritional value along with some incredible health benefits \u00a0of these delicious fruits (<a href=\"http:\/\/www.nutrition-and-you.com\/peaches.html\" target=\"_blank\">peaches<\/a>and <a href=\"http:\/\/www.eatingwell.com\/nutrition_health\/nutrition_news_information\/cherry_nutrition_benefits\" target=\"_blank\">cherries<\/a>)\u2014besides the fact that they are just yummy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13800\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43-300x225.jpg\" alt=\"2013-08-02 09.21.43\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This is delicious served with a dollop of whipped cream&#8230;or a scoop of vanilla ice cream. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><strong>Summer Fruit Crisp<\/strong><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13803\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20-300x225.jpg\" alt=\"2013-08-02 09.52.20\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<\/p>\n<p>3 large peaches, sliced<br \/>\n1 cup (18-20) cherries, pitted* and halved<br \/>\n1\/2 cup raspberries (optional)<br \/>\n1\/4 cup plus 1 tablespoon sugar<br \/>\n1\/2 teaspoon almond extract<br \/>\n3\/4\u00a0\u00a0cup oats<br \/>\n3\/4 cup almond flour<br \/>\n1 teaspoon cinnamon<br \/>\n1\/2 teaspoon salt<br \/>\n6 tablespoons\u00a0cold butter, cut into cubes<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat the oven to 375<\/li>\n<li>cube up the butter and place in refrigerator until ready for it<\/li>\n<li>in a baking dish or pie plate, toss the cut-up fruit with 1 tablespoon of the sugar and the almond extract; set aside.<\/li>\n<li>place the oats, 1\/4 cup sugar, almond flour, cinnamon and salt into the large bowl of a food processor. \u00a0pulse a couple of times to combine.<\/li>\n<li>add the cold butter, pulsing just until it comes together and forms clumps.\u00a0 (of course, you can mix this by hand, too!)<\/li>\n<li>mound the oat mixture on top of the prepared fruit being sure to cover it completely; bake for 35 to 40 minutes<\/li>\n<li>serve warm or cold<\/li>\n<\/ul>\n<p>* \u00a0Here is how I pitted the cherries\u2014with a drinking straw.\u00a0 Yes, ma\u2019am!\u00a0 Now I am a girl who l-o-v-e-s her gadgets!\u00a0 And, of course, you can go out and buy a cherry pitter.\u00a0 But sometimes simple is the better answer.\u00a0 And besides, then one can save her pennies to buy an incredible kitchen tool!\u00a0 <img decoding=\"async\" class=\"wp-smiley\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-includes\/images\/smilies\/icon_wink.gif\" alt=\";-)\" \/><\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13802\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35-300x225.jpg\" alt=\"2013-08-02 09.01.35\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Just do it like\u00a0this:<br \/>\n&#8211; remove the stem from a cherry<br \/>\n&#8211; place the end of the straw over the indentation of the cherry<br \/>\n<strong>&#8211; firmly, but gently,<\/strong> wiggle the straw straight through the cherry;
