\u00a0Some folks term it &#8216;Meatless Monday&#8217; and enjoy a meal typically on Monday \ud83d\ude09 that has a different source of protein. \u00a0We eat at least one supper each week that does not include meat&#8230;and this past week it was these healthy but oh-so-yummy stuffed portobello caps. \u00a0These included two proteins&#8212; quinoa and a few ounces of fresh mozzarella.<\/p>\n<p>This recipe is very versatile, too. \u00a0You can switch out the fresh mozz for a different cheese (goat cheese or feta would be easy and simple); a different herb could be used (mint or parsley or sage come to mind); even different veggies could be chopped small and substituted for the tomatoes. \u00a0Or perhaps you could choose a different &#8216;container&#8217; for the stuffing&#8230;maybe zucchini or small peppers? \u00a0If you do choose to add this, or a variation, to your menu plan&#8230;I would love to hear about it!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #cc160c;\">Caprese-style Stuffed Mushroom Caps<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-22-20.38.33.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26018\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-22-20.38.33-300x225.jpg\" alt=\"2015-05-22 20.38.33\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-22-20.38.33-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-22-20.38.33-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n4-5 medium portobella mushroom caps<br \/>\nolive oil<br \/>\nbalsamic vinegar<br \/>\nsea salt and ground pepper<br \/>\n1\/8 to 1\/4 cup of cooked quinoa per mushroom cap<br \/>\n1\/2 red onion, sliced thin<br \/>\nbig handful of yellow and red grape tomatoes, halved or quartered depending upon size<br \/>\n1 heaping tablespoon minced garlic<br \/>\n4 tablespoons pine nuts<br \/>\n4 ounces fresh mozzarella<br \/>\nfresh basil, sliced very thinly<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>cook quinoa according to package directions; set aside to cool slightly<\/li>\n<li>preheat oven to 400<\/li>\n<li>lightly oil the bottom of a baking pan<\/li>\n<li>clean the dome of the mushroom caps with a damp paper towel<\/li>\n<li>gently break off the stems (discard) and, using a sharp teaspoon, carefully scrape out the gills<\/li>\n<li>place the mushrooms (rounded side down) in the baking dish<\/li>\n<li>drizzle with a tiny amount of olive oil and a touch of balsamic vinegar; and season with a little sprinkle of sea salt and freshly ground pepper<\/li>\n<li>pre-bake the mushrooms for about 15 minutes just to soften up a bit<\/li>\n<li>remove from oven and set aside on the pan (there may be some liquid in the caps; carefully drain it off)<\/li>\n<li>meanwhile, in a medium skillet, heat a tablespoon or so of olive oil over medium low heat; add red onion and tomatoes<br \/>\nsaute gently for 10 minutes or so \u2018til the tomatoes have softened<\/li>\n<li>add in the garlic and stir constantly for just a minute; remove from heat<\/li>\n<li>add in the cooked quinoa and pine nuts; season to taste with salt and pepper<\/li>\n<li>(if necessary, moisten with a bit more olive oil)<\/li>\n<li>stir in the cut-up cheese and the basil<\/li>\n<li>stuff each mushroom cap dividing the mixture evenly between them (either use an ice cream scoop or simply scoop up into a firm ball using moistened hands<\/li>\n<li>bake in the oven for 15 minutes \u2018til the mushroom cap is tender; remove from oven<\/li>\n<li>if desired, run under broiler for 2 minutes<\/li>\n<li>these can also be assembled ahead of time, refrigerated; and then baked for 30 minutes or so<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #cc160c;\">\u2665 \u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #cc160c;\">\u2665\u00a0<\/span>\u00a0(Please don\u2019t\u00a0<strong>ever<\/strong>\u00a0forget that!)<\/p>\n<p><span style=\"color: #cc160c;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>How about you and your loved ones&#8230;do you have a meatless meal in your menu plan regularly?
