\u00a0This is one of those kinds of meals for us&#8212;tiny potatoes, onions, mushrooms, and chicken sausage roast in the oven with just a drizzle of extra virgin olive oil and herbs. \u00a0Start-to-finish this took about 15 minutes or less to prep. \u00a0 Oh&#8230;and only one pan to clean up! \u00a0That&#8217;s a big plus, too.<\/p>\n<p>I just love sausage! \u00a0 Finding these chicken sausage products from <em><a href=\"http:\/\/www.alfrescoallnatural.com\/products\/dinner-fresh-chicken-sausage?f=sweetitalianstyle\" target=\"_blank\"><strong>al fresco<\/strong> <\/a>\u00a0<\/em>made me very happy! \u00a0They make them in a few varieties; and \u00a0in links as well as patties. \u00a0I like to keep a package in the freezer. \u00a0Click the link above and check out the nutrition facts&#8230;you&#8217;ll be happily surprised, i think! \u00a0 You can slice up the raw sausage links&#8230;(divide each link into fourths.) \u00a0I remove the meat from the casings and just dollop it around the pan in smallish little &#8216;meatballs.&#8217; \u00a0You choose!<\/p>\n<p>This is a really easy dish to make! \u00a0Make sure to cut everything about the same size and don&#8217;t crowd the pan. \u00a0 \u00a0I served this alongside some steamed fresh green beans. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\">Rustic Chicken Sausage, Potatoes, and Veggies<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-15-20.08.25.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-25896\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-15-20.08.25-300x224.jpg\" alt=\"2015-05-15 20.08.25\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-15-20.08.25-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/05\/2015-05-15-20.08.25-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<\/p>\n<p>16 ounce package fresh (raw) Italian chicken sausage<br \/>\n1# baby potatoes, scrubbed and halved<br \/>\n1 large Vidalia onion, cut into half moons<br \/>\n10-12 ounces Baby Bella mushrooms, cleaned and halved<br \/>\n2 tablespoons extra-virgin olive oil<br \/>\n1\/2 teaspoon EACH \u00a0sea salt, freshly ground pepper<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 375<\/li>\n<li>line large baking sheet with parchment paper (optional)<\/li>\n<li>place cut-up veggies in a large bowl with the olive oil and s&amp;p<\/li>\n<li>stir together to thoroughly coat the veggies<\/li>\n<li>pour out onto the lined baking sheet<\/li>\n<li>scatter the sausage pieces evenly around the pan<\/li>\n<li>bake for 35-40 minutes &#8217;til potatoes just begin to brown a bit<\/li>\n<li>season to taste (if necessary) with s&amp;p<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #008000;\">\u2665 \u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #008000;\">\u2665\u00a0\u00a0<\/span>(Please don\u2019t\u00a0<strong>ever<\/strong>\u00a0forget that!)<\/p>\n<p><span style=\"color: #008000;\">\u2665\u00a0\u00a0<\/span>coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes you need a few quick and easy to fix meals in your menu plan that are still healthy but oh-so-yummy&#8230;wouldn&#8217;t you agree?
