{"id":25571,"date":"2015-04-28T00:30:03","date_gmt":"2015-04-28T04:30:03","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=25571"},"modified":"2015-04-27T15:16:40","modified_gmt":"2015-04-27T19:16:40","slug":"porkchops-with-mushroom-tarragon-sauce","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/04\/28\/porkchops-with-mushroom-tarragon-sauce\/","title":{"rendered":"PorkChops with Mushroom-Tarragon Sauce"},"content":{"rendered":"<p style=\"text-align: left;\">Recently we were on vacation in Florida and spent a few days with my sister and brother-in-law. \u00a0We had been having meals out for a week or so&#8230;and I was really missing a home-cooked meal. \u00a0They graciously prepared supper our first night visiting them&#8230;and it was my brother-in-law&#8217;s version of this dish. \u00a0Simply delicious! \u00a0(Thank you, Tony and Brenda!)<\/p>\n<p style=\"text-align: left;\">A few days after we returned home to New York, I thought about this dish. \u00a0It is simple and quick (aren&#8217;t some of your best meals just like that?). \u00a0But full of flavor from the caramelized onions and mushrooms, the abudance of garlic, and the subtle flavor that herbs&#8212;in this case, tarragon&#8212;add. \u00a0 The prep and cooking time amount to just about 30 minutes or so. This fits well into our healthy but oh-so-yummy POV since the pork chops are low in fat and protein-rich. \u00a0The entire dish \u00a0includes just a small amount of olive oil&#8230;and just a little bit of carbs. \u00a0You can make this your own by increasing the quantity of mushrooms or perhaps using a variety of mushrooms! \u00a0This goes along well with quite a variety of side dishes. \u00a0We enjoyed it with our family served with black rice and broccoli; I prepared it at home with one of our current favorites, this <a href=\"http:\/\/girlfriendscoffeehour.com\/2015\/02\/10\/sweet-potato-spinach-mash\/\" target=\"_blank\">Sweet Potato-Spinach Mash<\/a>. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\">Mushroom-Tarragon Pork Chops<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-24-19.52.33.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-25574\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-24-19.52.33-225x300.jpg\" alt=\"2015-04-24 19.52.33\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-24-19.52.33-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-24-19.52.33-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-24-19.52.33-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<br \/>\n4 boneless pork chops (5 or 6 ounces each)<br \/>\n1+ teaspoon lemon-pepper blend, freshly ground<br \/>\n2 teaspoons olive oil, divided<br \/>\n3\/4 pound Baby Bella mushrooms, cleaned and sliced<br \/>\n1 medium sweet onion, halved and sliced into half-moons<br \/>\n2 tablespoons minced garlic (I use jarred)<br \/>\n1\/2 cup white wine (or chicken broth)<br \/>\n2 tablespoons brown rice (or all-purpose) flour<br \/>\n1 cup reduced-sodium chicken broth<br \/>\n1 teaspoon dried tarragon or 2 teaspoons minced fresh tarragon<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>coat both sides of pork chops with lemon-pepper blend<\/li>\n<li>in a large skillet over medium-high heat, warm 1 teaspoon olive oil, and then add pork chops<\/li>\n<li>quickly brown (about 2 minutes each side), and then remove, cover and keep warm<\/li>\n<li>in the same pan, saute mushrooms and onion in additional teaspoon of oil &#8217;til lightly caramelized<\/li>\n<li>lower heat and add garlic; stirring constantly, cook for 1 minute longer<\/li>\n<li>stir in wine; raise heat to medium and bring to a boil; cook \u2018til all liquids are almost evaporated<\/li>\n<li>lower heat again and sprinkle the flour over the onion-mushroom mixture; stir well and cook on low heat for 2-3 minutes to reduce the flour-y taste<\/li>\n<li>stir the broth into the onion-mushroom mixture \u2018til smooth<br \/>\nbring to a boil; cook and stir continually for about 2 minutes \u2018til thickened and a gravy has formed.
