It is a time to refresh spirit, soul, and body. Over the next couple of weeks, our faithful bloggers will be taking a \u2018spring break\u2019 from writing so that they can come back to us refreshed and freshly anointed.<\/span><br \/>\n<span style=\"font-family: 'Comic Sans MS', sans-serif; font-size: 12pt;\">However, Girlfriends\u2019 Coffee Hour website won\u2019t \u2018go black\u2019! We will be revisiting some of our favorite blogs and daily devotions which have blessed us in the past. God bless you, ladies!<\/span><\/p>\n<p style=\"text-align: center;\">\n<\/blockquote>\n<p>I am sure you have heard me mention once or twice (or a dozen times!) how very much Robert loves his soup! \u00a0And homemade soup is often on our menu&#8230;summer, winter, spring or fall! \u00a0This is a great soup to prepare even when you don&#8217;t have some of your own wonderful stock on hand. \u00a0It is a really flavorful soup that doesn\u2019t need to rely on homemade stock.<\/p>\n<p>This soup also lends itself to substitutions. \u00a0Choose varieties of fish (maybe even some mussels or small clams!) that your family enjoys. \u00a0And the choices of vegetables can be switched up, too. \u00a0If I had had a head of cauliflower, it definitely would have joined the pot! \u00a0I did steam a couple of handfuls of fresh green beans that I found in the veggie drawer\u2026they were a nice addition! \u00a0(I would love to hear what you decide to add to your rendition of this soup; please leave a message in the comments section, ok?) \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff6600;\">Mediterranean Fish Soup<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/09\/2014-09-14-20.36.05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21820\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/09\/2014-09-14-20.36.05-300x225.jpg\" alt=\"2014-09-14 20.36.05\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/09\/2014-09-14-20.36.05-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/09\/2014-09-14-20.36.05.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n2 tablespoons olive oil<br \/>\n1 red onion, diced small<br \/>\n2 stalks celery, cut into narrow slices<br \/>\n5 or 6 medium-sized baby bella mushrooms, chopped medium<br \/>\n1 cup chopped leeks use ONLY white part (approx. 2 leeks)<br \/>\n2 tablespoons chopped garlic (I use jarred)<br \/>\n1 cup dry white wine (or additional stock)<br \/>\n1 (28 ounce) can chunky crushed tomatoes<br \/>\n1 quart good chicken (or vegetable) stock<br \/>\n1\/2 small butternut squash, peeled and chopped into 1\/2&#8243; chunks<br \/>\n1 teaspoon dried tarragon<br \/>\n1 teaspoon dried thyme<br \/>\n1\/2 teaspoon sea salt<br \/>\nfew grinds of freshly ground pepper (or lemon pepper!)<br \/>\n1 (6 ounce) salmon fillet (no skin), cut into bite-sized chunks<br \/>\n1 (4 ounce) tilapia fillet (or another mild-tasting white fish), cut into bite-sized chunks<br \/>\n6 ounces raw medium-sized shrimp, peeled and cleaned<br \/>\n\u00bd lemon<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>in a large stockpot, heat olive oil over medium-high heat<\/li>\n<li>add onions, mushrooms, celery, and leeks; saute for 7-8 minutes \u2018til mushrooms just begin to brown<\/li>\n<li>stir in the chopped garlic and stir constantly for 1 minute<\/li>\n<li>add in the wine, stock, and tomatoes; bring to a boil. reduce heat, cover and simmer for 30 minutes<\/li>\n<li>remove lid, add in the butternut and seasonings; stir well. simmer for additional 10 minutes<\/li>\n<li>slide in the salmon and tilapia pieces; continue to simmer for 8-9 minutes.<br \/>\nadd in the shrimp and simmer for 5 more minutes<\/li>\n<li>reduce heat to very low and carefully taste for additional seasoning; add if needed<\/li>\n<li>serve with rice or small pasta\u00a0 (a little squeeze of fresh lemon is perfect!)<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665 \u00a0 \u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665 \u00a0 \u2665<\/span><\/p>\n<p>God loves you!\u00a0<span style=\"color: #ff6600;\">\u00a0\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff6600;\">\u2665\u00a0\u00a0<\/span>coleen<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Many of you have gone on Spring Break or are anticipating taking a vacation this summer.
