(But there is not&#8230;so&#8230;if you want to smell it you will just have to put this together yourself!) \u00a0My husband loves lamb! It is a bit of an indulgence, but he deserves it! \u00a0So we enjoyed this for our Easter Sunday dinner. \u00a0This was super-easy, too! \u00a0I served it with this <a href=\"http:\/\/girlfriendscoffeehour.com\/2015\/02\/10\/sweet-potato-spinach-mash\/\" target=\"_blank\">Sweet Potato &#8211; Spinach Mash<\/a>. \u00a0This meal fit well into our healthy but oh-so-yummy POV also. Full of protein, low-carb&#8230;and delish! \u00a0Lamb is \u2018in-season\u2019 now so you shouldn\u2019t find it difficult to purchase either in your grocery store or at the butcher shop. Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff9900;\">CrockPot Apricot-Honey Lamb Roast<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-06-20.16.16.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-25324\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-06-20.16.16-300x224.jpg\" alt=\"2015-04-06 20.16.16\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-06-20.16.16-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/04\/2015-04-06-20.16.16-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n3-4# boneless lamb roast<br \/>\n1 lemon, zested and juiced<br \/>\n2 tablespoons spicy mustard<br \/>\n2 tablespoons honey<br \/>\n2 tablespoons chopped garlic<br \/>\n1 teaspoon dried crushed rosemary<br \/>\n1 teaspoon dried thyme<br \/>\n1 teaspoon freshly ground pepper<br \/>\n1\/2 cup (or more) dried apricots<br \/>\n1 medium sweet onion, cut into thin wedges<br \/>\n1\/2 cup pitted green olives<br \/>\n2-4 teaspoons cornstarch (or your favorite gravy thickener)<br \/>\n1\/2 &#8211; 1 cup sour cream or plain Greek yogurt (optional)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>use a small CrockPot (I used my 2-quart insert); turn it on and put the lid on to begin warming it up<\/li>\n<li>add the onions, olives, and apricots to the bottom of the insert<\/li>\n<li>in a small bowl, combine mustard, honey, garlic, the spices, lemon zest, and lemon juice; stir with a spoon to form a paste<\/li>\n<li>rub this on all sides of the lamb roast; place into the CrockPot liner on top of the fruit and veggies<\/li>\n<li>cover and cook on low for 8 hours (you can check it with a meat thermometer, if you&#8217;d like, but I usually cook \u2018til it&#8217;s very tender and falling apart)<\/li>\n<li>remove the meat; slice, and keep warm<\/li>\n<li>skim off (and discard) as much fat as you can (just use a small ladle)<\/li>\n<li>using an immersion blender right in the CrockPot liner, puree the fruit and veggies into a smooth sauce<\/li>\n<li>optional &#8211; you can add a bit of cornstarch slurry to thicken as you puree, or a bit of sour cream<\/li>\n<\/ul>\n<p>NOTE: the juices can be served as a simple <em>au jus<\/em> spooned over the meat, or you could even make a quick gravy!<\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\">\u2665 \u00a0 \u2665 \u00a0 \u2665 \u00a0 \u2665 \u00a0 \u2665<\/span><\/p>\n<p style=\"text-align: left;\"><strong>God loves you<\/strong>! <span style=\"color: #ff9900;\">\u00a0\u2665 \u00a0<\/span>(Don\u2019t <strong><em>ever<\/em> <\/strong>forget that!)<\/p>\n<p style=\"text-align: left;\"><span style=\"color: #ff9900;\">\u2665\u00a0<\/span> coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh! \u00a0If only there were a way to share with you the aroma that filled the house when this was cooking away in the CrockPot&#8230;delectable!
