\u00a0These <\/span><strong style=\"line-height: 1.5;\">Braised Beef Shanks with Gremolata<\/strong><span style=\"line-height: 1.5;\"> would be perfect for Easter or any other lazy Sunday afternoon. \u00a0Make them now,\u00a0before spring heats up and you don&#8217;t want to have your oven on for three hours!<\/span><\/p>\n<p>Yes, I said<em> three hours<\/em>, but the prep is pretty easy. \u00a0Then you just pop this dish in the oven letting the low and slow cooking turn something pretty plain into magic! \u00a0Look for thick cross-sections of shank (the leg) with a large bone in the middle, or ask your butcher. \u00a0The meat will fall off the bone, the marrow will soften and become delicious, and you top it off with a bright and flavorful gremolata. \u00a0Serve with roasted potatoes and vegetables and eat like a king!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Braised Beef Shanks with Gremolata<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4 pounds of cross-cut beef shanks (or ask for &#8216;osso buco&#8217; cut)<\/li>\n<li>1\/4 cup flour, seasoned with 1 teaspoon salt\u00a0and 1\/2 teaspoon pepper<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>2 tablespoons butter<\/li>\n<li>1 large onion, diced<\/li>\n<li>3 carrots, diced<\/li>\n<li>1 stick celery, diced<\/li>\n<li>1\/2 teaspoon celery salt (or plain salt)<\/li>\n<li>1 can of tomatoes (I used fresh tomatoes &#8211; just dice them, about one cup)<\/li>\n<li>2 cups red wine<\/li>\n<li>2 cups water<\/li>\n<li>1 lemon, zested (or peeled, and mince the peel)<\/li>\n<li>1 large clove garlic, minced<\/li>\n<li>1 small handful parsley, minced<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>\u00a0Preheat oven to 300*F. \u00a0Place the seasoned flour in a wide bowl or pie plate, and dredge all the shank pieces. \u00a0In a very large pot, heat the oil and butter together, and brown the meat.<\/li>\n<li>When browned, remove the meat to a plate, and add the diced onions, carrots, celery, and celery salt to the pan. \u00a0Saut\u00e9 for about five minutes, or until starting to soften. \u00a0Add the tomatoes, wine, and water, then \u00a0simmer for five minutes.<\/li>\n<li>Add the meat back to the pan, and make sure it is submerged in the vegetable and wine mixture. \u00a0Cover with a lid and bake for 2.5 &#8211; 3 hours, or until done and very tender.<\/li>\n<li>Remove the meat from the pot and return the pot to the stovetop. \u00a0Stir the juices and vegetables over medium heat and let it reduce while you make the gremolata.<\/li>\n<li>To make the gremolata: \u00a0mix together the lemon zest, minced garlic, and minced parsley. \u00a0Stir to combine.<\/li>\n<li>To serve: \u00a0Spoon some veggies and juice into your bowl. \u00a0Place a shank on top, and garnish with a spoonful of gremolata.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipes, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; \u2026otherwise known as &#8220;Osso Buco&#8221;. \u00a0 I didn&#8217;t use veal, so I&#8217;m calling it something else. \u00a0When you&#8217;re the boss in the kitchen, you can do that!
