\u00a0The first time I made it, I made just enough for supper. \u00a0THAT was a mistake! \u00a0Hubby loved it&#8230;so i included it in our menu plan for the next week. \u00a0This time, I made a double batch (quantities below). \u00a0This salad stays very well kept in the &#8216;fridge for up to a week (my experience). \u00a0The vinaigrette is tart and sweet at the same time making this refreshing.<\/p>\n<p>This salad is a great basic and can easily be adapted to your loved ones\u2019 tastes. \u00a0Here are a few additional serving suggestions:<br \/>\n&#8211; add another orange, segmented and chopped, is delicious in here<br \/>\n&#8211; this is even better (as seen in the picture) with some roasted asparagus or steamed green beans tossed in<br \/>\n&#8211; you can use agave instead of the honey to make a vegan salad<br \/>\n&#8211; try a different nut or seed (pine nuts, slivered almonds, etc.)<\/p>\n<p>I think this is a good one to keep in the rotation all year long! \u00a0Equally enjoyable wintertime \u00a0alongside a piece of salmon as it would be on your picnic buffet during the summertime! \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff6600;\">Quinoa Salad with Citrus-Honey Vinaigrette<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2014-11-27-14.19.10.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-25202\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2014-11-27-14.19.10-300x224.jpg\" alt=\"2014-11-27 14.19.10\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2014-11-27-14.19.10-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2014-11-27-14.19.10-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n<strong><em>salad<\/em><\/strong><br \/>\n1 butternut squash, peeled, seeded, and cut up into 1&#8243; cubes<br \/>\nolive (or coconut) oil<br \/>\nsalt and freshly ground black pepper, for seasoning squash<br \/>\n2 cups multi-color quinoa<br \/>\n1 teaspoon olive or coconut oil<br \/>\n4 cups water<br \/>\npinch of salt<br \/>\n1 cup dried cranberries<br \/>\n1 cup pepitas (pumpkin seeds)<\/p>\n<p><strong><em>vinaigrette<\/em><\/strong><br \/>\n2 large oranges (zest 1 first; and then juice both of them)<br \/>\n1\/4 cup olive oil<br \/>\n1 tablespoon honey<br \/>\nSalt and freshly ground black pepper, to taste<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 400<\/li>\n<li>line a baking sheet with parchment paper<\/li>\n<li>place butternut squash cubes and oil in a large bowl; season well with salt, pepper and\u00a0pour onto the lined baking sheet<\/li>\n<li>roast the squash for 20 minutes, turning once, \u2018til tender and slightly caramelized<\/li>\n<li>while the butternut is roasting, cook the quinoa: in a medium saucepan, heat 1 teaspoon of oil and then stir in the quinoa, making sure to coat all the grains w\/the oil. \u00a0then add the water and salt; stir well and bring to a boil over medium heat. cover pan, turn heat to low and simmer for about 15 minutes or so \u2018til all the water is absorbed. remove from heat and fluff with a fork. let quinoa cool to room temperature (I spread it out on a baking sheet)<\/li>\n<li>and this is a good time to get the vinaigrette together&#8230; in a small bowl, whisk together the orange juice, zest, olive oil, and honey (I used an immersion blender) \u2018til emulsified. \u00a0season well with salt and pepper, to taste<\/li>\n<li>when the squash is done, let that cool for a few minutes, too. then combine quinoa, butternut, dried cranberries, and pepitas in a large serving bowl<\/li>\n<li>drizzle the vinaigrette over quinoa salad. toss until ingredients are well dressed. \u00a0taste again for additional seasoning<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">\u00a0<span style=\"color: #ff6600;\"> \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665\u00a0<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #ff6600;\">\u00a0\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff6600;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This simple salad is so refreshing!
