You probably wouldn\u2019t have to search too hard to find organic chicken sausages and meatballs. \u00a0All very helpful towards a healthy eating lifestyle! And they are so handy for those nights when your meal plan falls apart (or you forgot to take something out of the freezer)! These even defrost right in their package in a bowl of cold water for 10-15 minutes!<\/p>\n<p>But recently I had the crazy thought, \u2018Why can\u2019t I do that? I should be able to make my own, right?\u2019 And then I found it that wasn\u2019t really so crazy! \u00a0Easy to find the ingredients&#8230;easy to throw together&#8230;easy to prepare&#8230;easy to cook! \u00a0And here\u2019s the best part\u2014making them from scratch in your own kitchen, the variety\u2019s are almost endless. \u00a0But I started fairly simple&#8230;check out the recipe! \u00a0The variety I made this time lent itself well to serving with some <b>Tzatziki<\/b>\u00a0(zah-d\/zee-kee)\u00a0Sauce (Greek yogurt cucumber sauce) alongside some spaghetti squash and steamed broccoli&#8230;yum! \u00a0I would love to hear about your version, if you decide to make them. \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\">Homemade Chicken Meatballs&#8212;Greek Style<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2015-03-11-20.11.51.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-25072\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2015-03-11-20.11.51-225x300.jpg\" alt=\"2015-03-11 20.11.51\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2015-03-11-20.11.51-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2015-03-11-20.11.51-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/03\/2015-03-11-20.11.51-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n<em><span style=\"text-decoration: underline;\">meatballs<\/span><\/em>:<br \/>\n2 (10 ounce) boxes frozen chopped spinach<br \/>\n1 tablespoon +\/- olive oil<br \/>\n1 small onion, finely chopped<br \/>\n2 heaping tablespoons chopped garlic<br \/>\n1 egg, lightly beaten<br \/>\n(2) 4 ounce pkg. crumbled feta cheese (set aside 2 ounces or so)<br \/>\n2# ground chicken (or \u00bd chicken, \u00bd turkey)<br \/>\n2 tablespoons lemon-pepper blend<br \/>\n1\/4 cup almond flour<\/p>\n<p><span style=\"text-decoration: underline;\"><em>tzatziki sauce<\/em><\/span>:<br \/>\n1+1\/2 cups Greek-style <strong>plain<\/strong> yogurt<br \/>\n1\/2-1 teaspoon garlic, finely minced<br \/>\n1\/3 seedless cucumber, peeled and chopped small<br \/>\n3 tablespoons fresh dill (or 2 teaspoons dried)<br \/>\n1\/2 lemon, juiced<br \/>\nsea salt, freshly ground pepper (to taste)<\/p>\n<p>directions:<\/p>\n<ul>\n<li>mix up the tzatziki sauce and refrigerate &#8217;til ready to serve<\/li>\n<li>preheat oven to 400; line a baking sheet w\/parchment paper<\/li>\n<li>cook frozen spinach (stovetop or microwave) just \u2018til heated through; drain excess liquid, dump out onto a clean dishtowel and squeeze dry; set aside<\/li>\n<li>preheat the oven to 400 degrees F<\/li>\n<li>in a large bowl combine onion and garlic; add egg<\/li>\n<li>add the spinach, pulling it apart to separate it<\/li>\n<li>add feta, chicken, and seasoning to the bowl<\/li>\n<li>dust the almond flour over top<\/li>\n<li>start combining and add a 1 tablespoon of extra-virgin olive oil<\/li>\n<li>lightly mix everything \u2018til well-combined<\/li>\n<li>using a 1+1\/2&#8243; cookie scoop, or something similar, form 36-40 meatballs; they do not have to be perfectly round&#8230;I left mine fairly rustic<\/li>\n<li>place the meatballs on the lined baking sheet and bake for 10 minutes and then turn them over<\/li>\n<li>cook for additional 8-10 minutes (depending on the size of them) \u2018til they are beginning to brown<\/li>\n<li>I used my instant-read meat thermometer (165 degrees for poultry); you can also test them by poking one and making sure the juices run clear<\/li>\n<li>serve with tzatziki sauce and a sprinkle of the leftover feta cheese<\/li>\n<\/ul>\n<p>I know I often mention that I use \u2018lemon-pepper seasoning\u2019 in the place of salt&amp;pepper. <a href=\"http:\/\/www.mccormick.com\/Spices-and-Flavors\/Herbs-and-Spices\/Grinders\/Lemon-and-Pepper-Seasoning-Grinder\">\u00a0Here is a link <\/a>to what I use.<\/p>\n<p style=\"text-align: center;\">\u00a0\u00a0\u2665 \u00a0 \u00a0 \u00a0\u00a0\u2665 \u00a0 \u00a0 \u00a0\u00a0\u2665 \u00a0 \u00a0 \u00a0\u00a0\u2665 \u00a0 \u00a0 \u00a0\u00a0\u2665<\/p>\n<p>God loves you!\u00a0\u00a0\u2665\u00a0\u00a0(Don\u2019t ever forget that!)<\/p>\n<p>\u2665\u00a0\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Y\u2019know those fully-cooked ground chicken sausages and meatballs that you can find in almost every grocery store?
