For some of you, spring has already sprung. Here in Upstate NY, the daylight is increasing, the temps are warmer, the piles of snow are beginning to melt! And &lt;slowly&#8230;&gt; the fruits and veggies are getting increasingly more tempting in the produce department of our grocery stores. This past week, I could actually smell the fragrance of the ripe strawberries as I shopped my list! And so, two packages of them were added to our shopping cart!<\/p>\n<p>One thing that I determined to prepare was a fruity avocado salsa&#8230;so easy-peasy! And so good for us (you, too!). And fits perfectly into our healthy but oh-so-yummy POV! We all are aware of the benefits of eating fresh fruits&#8230;loaded with vitamin and fiber. And avocados\u2014such a great addition to your healthy eating plan! Here is some info on the <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=5\" target=\"_blank\">benefits and the nutrition<\/a> received from eating avocados.<\/p>\n<p>We had<a href=\"http:\/\/girlfriendscoffeehour.com\/2014\/12\/29\/cauliflower-rice-veggies\/\" target=\"_blank\"> this cauliflower rice dish <\/a>alongside. \u00a0This salsa would be delish on quite a variety of seafood&#8230;from fillets to shrimp to scallops! What\u2019s your favorite?<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ffcc00;\">Lemony<\/span>&#8211;<span style=\"color: #99cc00;\">Garlicky<\/span> Tilapia with <span style=\"color: #99cc00;\">Avocado<\/span><span style=\"color: #942525;\"> Salsa<\/span><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\">ingredients<\/span>:<br \/>\n<strong>salsa<\/strong>:<br \/>\n1 mango, peeled and cut into smallish cubes<br \/>\n1 avocado, peeled and cut into smallish cubes<br \/>\nhandful of strawberries, cut up<br \/>\n2 teaspoons red onion, finely minced<br \/>\n1 lemon (or lime), juiced<br \/>\nsea salt, freshly ground pepper (I use a lemon-pepper blend)<br \/>\nred pepper flakes (optional)<\/p>\n<p><em><strong>fish<\/strong><\/em>:<br \/>\n4 tilapia fillets (4-5 ounces each)<br \/>\n2 tablespoons red onion, finely minced<br \/>\n4 tablespoons chopped garlic (I use jarred)<br \/>\n2 tablespoons butter<br \/>\n1 large lemon or lime, zested and juiced<br \/>\n3 teaspoons dried parsley<br \/>\n1 teaspoon dried tarragon<br \/>\nsalt and pepper to taste<br \/>\nolive (or coconut) oil<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<p><strong><em>salsa<\/em><\/strong><\/p>\n<ul>\n<li>mix all ingredients together in a glass or ceramic dish; set aside<\/li>\n<\/ul>\n<p><strong><em>fish<\/em><\/strong><\/p>\n<ul>\n<li>preheat oven to 400<\/li>\n<li>lightly coat the bottom of a glass baking dish with oil<\/li>\n<li>in a small saucepan, melt butter<\/li>\n<li>add red onion and saute for 3-4 minutes to soften<\/li>\n<li>add garlic and saute on low for an additional minute stirring constantly<\/li>\n<li>remove from heat and add lemon juice<\/li>\n<li>lay out the tilapia in the pan<\/li>\n<li>sprinkle with the herbs, zest, and a generous amount of salt and pepper<\/li>\n<li>pour the butter mixture over top the fish<\/li>\n<li>bake for 10-20 minutes (depending on the thickness of the fillets) \u2018til flaky<\/li>\n<\/ul>\n<p>serve fish with avocado salsa on the side&#8230;perhaps with quinoa, or rice; enjoy!<\/p>\n<p style=\"text-align: center;\"><span style=\"color: #99cc00;\">\u2665 \u00a0<\/span> <span style=\"color: #ff9900;\">\u00a0\u2665 \u00a0\u00a0<\/span>\u00a0<span style=\"color: #942525;\">\u2665\u00a0<\/span>\u00a0 \u00a0<span style=\"color: #ff9900;\">\u2665<\/span> \u00a0 <span style=\"color: #99cc00;\">\u00a0\u2665<\/span><\/p>\n<p>God loves you!\u00a0<span style=\"color: #ff9900;\">\u00a0\u2665<\/span>\u00a0\u00a0(Don\u2019t <em>ever<\/em> forget that!)<\/p>\n<p><span style=\"color: #ff9900;\">\u2665\u00a0\u00a0<\/span>coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh&#8230;it is getting close!
