Low heat and gentle, slow cooking gives the stew a roasted flavor, and ensures that the meat and veggies are fall-apart tender. And in addition, the liquids will come together into a thick, smooth gravy. \u00a0Yumm-O!<\/p>\n<p>This time, instead of the usual stew, I added some salsa verde (yup, the green kind!), sweet potatoes, black beans, and Mexican seasonings. \u00a0And I baked some mini-corn muffins for you-know-who to indulge in! It was a great comfort food meal&#8230;since we still have frozen solid piles of snow and ice. \u00a0This meal fits well into our healthy but oh-so-yummy POV. \u00a0I like to make stews using a piece of bottom round steak from the butcher counter. \u00a0This cut doesn&#8217;t have much extra fat but still becomes tender due to the low heat and gentle simmering for 90 minutes or so. \u00a0Then load it up with lots of veggies&#8230;healthy and oh-so-yummy! \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-24-19.46.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-24686\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-24-19.46.38-300x225.jpg\" alt=\"2015-02-24 19.46.38\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-24-19.46.38-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-24-19.46.38.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\">\u00a0<span style=\"color: #993300;\">Mexican Beef Stew<\/span><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<\/p>\n<p>2 tablespoons +\/- olive or coconut oil<br \/>\n2 pounds beef stew meat, cut into bite-size chunks<br \/>\n2 tablespoons brown rice flour (optional)<br \/>\n1\/2 teaspoon EACH sea salt, freshly ground pepper<br \/>\n3 tablespoons minced garlic (I use jarred)<br \/>\n1 cup dry red wine (or additional broth)<br \/>\n1 quart beef broth<br \/>\n1 cup water<br \/>\n1 jar (10-12 ounces) salsa verde<br \/>\n1 teaspoon +\/- ground chipotle pepper<br \/>\n1 teaspoon dried thyme<br \/>\n3 medium sweet potatoes, peeled and chopped into bite-sized chunks<br \/>\n1\/2 bag frozen pearl onions<br \/>\n1\/2 # baby carrots, sliced in half length-wise<br \/>\n5 ounce can chopped green chilies (optional)<br \/>\n1 (15 ounce) can black beans, drained and rinsed<br \/>\n1 cup frozen sweet corn (optional)<br \/>\nadditional sea salt and pepper<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>heat the oil in a large Dutch oven over medium heat<\/li>\n<li>add the 1\/2 teaspoon each of salt and pepper to the flour<\/li>\n<li>dredge the meat in the flour mixture (if you eat grain free, you could skip this step)<\/li>\n<li>brown the meat, working in 3-4 batches, just \u2018til the cubes are lightly browned<\/li>\n<li>remove meat from pot and set aside<\/li>\n<li>lower heat and add garlic to pan drippings; stir constantly for about 1 minute \u2018til fragrant<\/li>\n<li>increase heat back to medium-high, stir in the wine, and scrape the bottom of the pan to loosen all the bits. allow to simmer \u2018til liquid is reduced about half<\/li>\n<li>add in the beef broth, the seasonings, and the browned meat cubes; stir well<\/li>\n<li>lower heat to a simmer; cover and allow to cook for about an hour \u2018til meat is getting tender<\/li>\n<li>add in the sweet potatoes and carrots. raise heat, cover, and bring back to a simmer<\/li>\n<li>cook for an additional 30 minutes \u2018til potatoes are cooked through and the liquids have become a smooth, thick gravy<\/li>\n<li>stir in the chopped chilies, black beans (and corn, if using); simmer &#8217;til heated through<\/li>\n<li>taste for seasoning<\/li>\n<li>(if the &#8216;gravy&#8217; needs any additional thickening, use 1 tablespoon of cornstarch with equal amount of cold water&#8230;stir &#8217;til completely smooth; then pour into hot liquid (your stew) stirring constantly &#8217;til liquid has thickened. \u00a0allow to boil for an additional minute.)\n<p style=\"text-align: center;\"><span style=\"color: #993300;\">\u2665 \u00a0 \u00a0\u2665 \u00a0\u00a0<span style=\"color: #ff6600;\">\u00a0\u2665\u00a0<\/span>\u00a0 \u00a0\u2665 \u00a0 \u00a0\u2665<\/span><\/p>\n<p>God loves you!\u00a0<span style=\"color: #ff6600;\">\u00a0\u2665\u00a0<\/span>\u00a0(Don\u2019t <em>ever<\/em> forget that!)<\/p>\n<p><span style=\"color: #ff6600;\">\u2665\u00a0<\/span>\u00a0coleen<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Perhaps Beef Stew sounds as if it would be complicated and difficult to make\u2014just the opposite. \u00a0Simple, easy-peasy! \u00a0The key is slow-cooking. \u00a0You can either let it come together in a crockpot for a few hours or just as easily on the stovetop.
