{"id":24482,"date":"2015-02-17T00:30:34","date_gmt":"2015-02-17T05:30:34","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=24482"},"modified":"2015-02-16T23:10:04","modified_gmt":"2015-02-17T04:10:04","slug":"roasted-apples-sweet-potatoes","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/02\/17\/roasted-apples-sweet-potatoes\/","title":{"rendered":"Roasted Apples and Sweet Potatoes"},"content":{"rendered":"<p>In my continuing quest to find new and yummy ways to serve more veggies, I have had some successes&#8230;and a few failures. \u00a0Like roasted cauliflower with a healthier spinach-artichoke dip topping. \u00a0Ummm, yeah&#8230;it did NOT come together on the plate like it did in my head. \u00a0But this\u2014the Roasted Sweets and Apples\u2014so yummy!<\/p>\n<p>We enjoyed this alongside a roasted chicken. \u00a0This is healthy but-oh-so-yummy comfort food! \u00a0 I prepared this for supper on the coldest day I think I have ever experienced&#8230;with the windchill factor, our temps never got out of the below zero range. \u00a0So when my husband walked in, I literally heard him say, &#8216;ahhhhh&#8230;.&#8217; \u00a0(Made me happy, too!)<\/p>\n<p>This recipe makes enough for leftovers. \u00a0We enjoyed this a day or two later for lunch accompanied with breakfast sausage and a nice, runny sunny-side up egg. However you serve it, I hope you and your loved ones enjoy it!<\/p>\n<h3 style=\"text-align: center;\">Roasted<span style=\"color: #ff6600;\"> Sweet Potatoes<\/span> and<span style=\"color: #eb7c7c;\"> Apples<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-16-20.34.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-24486\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-16-20.34.38-300x225.jpg\" alt=\"2015-02-16 20.34.38\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-16-20.34.38-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-16-20.34.38.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n2# sweet potatoes, peeled and cubed about 1&#8243;<br \/>\n1 red onion, diced small<br \/>\n3 tablespoons olive or coconut oil<br \/>\n1\/2 teaspoon cinnamon<br \/>\n3 apples, peeled, cored, and cubed about 1&#8243;<br \/>\n1 teaspoon lemon juice<br \/>\n1 teaspoon dried crushed rosemary (or thyme)<br \/>\nsea salt, freshly ground pepper (I use lemon-pepper blend)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 400<\/li>\n<li>line baking sheet pan with parchment paper<\/li>\n<li>in a large mixing bowl, combine sweet potatoes, cinnamon, onions, generous amount of s&amp;p, and 2 tablespoons olive oil \u2018til potatoes are thoroughly coated<\/li>\n<li>pour onto lined baking sheet<\/li>\n<li>place in oven and bake for 20-25 minutes or so<\/li>\n<li>in same bowl, combine apples, lemon juice, 1 tablespoon olive oil, and rosemary<\/li>\n<li>add to sweet potatoes<\/li>\n<li>roast for additional 15-20 minutes, \u2018til sweet potatoes are tender<\/li>\n<li>taste for additional s&amp;p<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665 \u00a0 \u2665 \u00a0 \u2665 \u00a0 \u2665 \u00a0 \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>! \u00a0<span style=\"color: #ff6600;\">\u2665<\/span> \u00a0(Don\u2019t <strong><em>ever<\/em> <\/strong>forget that!)<\/p>\n<p><span style=\"color: #ff6600;\">\u2665<\/span>\u00a0 coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In my continuing quest to find new and yummy ways to serve more veggies, I have had some successes&#8230;and a few failures. \u00a0Like roasted cauliflower with a healthier spinach-artichoke dip topping. \u00a0Ummm, yeah&#8230;it did NOT come together on the plate like it did in my head. \u00a0But this\u2014the Roasted Sweets and Apples\u2014so yummy!
