Preparing and eating LOTS of soup in January was so helpful! One good habit we are working on is having half the plate (or more!) full of veggies. Often that works out just fine. And a side salad is always a good and simple answer. But I find myself desiring some \u2018comfort food\u2019 especially during these cold and snowy months. And most of the dishes that I consider \u2018comfort food\u2019 don\u2019t easily fall into the \u2018healthy but oh-so-yummy\u2019 parameters. However, the other night a recipe came together that fit the bill perfectly!<\/p>\n<h3 style=\"text-align: center;\">Sweet Potato and Spinach Mash&#8230;oh, yeah!<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.46.17.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-24343\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.46.17-300x225.jpg\" alt=\"2015-02-03 20.46.17\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.46.17-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.46.17.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I think that this is a \u2018non\u2019-recipe&#8230;you know&#8230;a basic idea where you can tweak it using what you have on hand. Like this: the frozen spinach could be switched out for finely sliced fresh spinach or some baby arugula or kale. You could use ricotta or greek yogurt or even cream cheese for the goat cheese. Try some different spices&#8230;cinnamon or nutmeg would be good; even your favorite curry spice blend. And I used some leftover baked sweet potatoes&#8230;that made it super quick and simple! If you try this recipe, I would love to hear of your variations! \u00a0Enjoy!<\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<br \/>\n12 ounce bag frozen chopped spinach<br \/>\n1\/2 cup chicken broth<br \/>\n1 teaspoon minced garlic (I use jarred)<br \/>\n1-2 teaspoons dried herbs (thyme or marjoram or tarragon)<br \/>\n6 small baked sweet potatoes, skins removed<br \/>\nadditional 1\/2 cup broth or milk (use if mixture is too dry)<br \/>\nsea salt, freshly ground pepper (I use lemon-pepper blend)<br \/>\n3-4 ounces goat cheese, crumbled<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.32.19.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-24344\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.32.19-300x225.jpg\" alt=\"2015-02-03 20.32.19\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.32.19-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-03-20.32.19.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>place the spinach and broth in a medium-sized saute pan with a lid; cover and bring to a boil, then reduce heat and simmer for 5 minutes<\/li>\n<li>stir in the minced garlic, s&amp;p, and herbs<\/li>\n<li>add the sweet potatoes and mash the whole mixture together<\/li>\n<li>cover again and simmer gently \u2018til heated through<\/li>\n<li>taste for seasoning, and add in the goat cheese<\/li>\n<li>remove from heat and serve<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665\u00a0 <span style=\"color: #339966;\">\u2665\u00a0<\/span> \u2665\u00a0 <span style=\"color: #339966;\">\u2665\u00a0<\/span> \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!<span style=\"color: #339966;\"> \u00a0\u2665<\/span> \u00a0(Don\u2019t <strong><em>ever<\/em> <\/strong>forget that!)<\/p>\n<p><span style=\"color: #339966;\">\u2665\u00a0<\/span> coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Like many of you, I am sure, we have refocused our healthy eating lifestyle.
