\u00a0Check &#8217;em out!<\/p>\n<p><a href=\"http:\/\/www.huffingtonpost.com\/2014\/08\/19\/paleo-recipes-with-cauliflower-delish_n_5689172.html\" target=\"_blank\">How-To Substitute Cauliflower Deliciously&#8230;.<\/a><\/p>\n<p><a href=\"http:\/\/www.ibreatheimhungry.com\/2013\/09\/25-of-the-best-cauliflower-recipes-on-pinterest.html\" target=\"_blank\">25 Of the Best Cauliflower Recipes on Pinterest<\/a><\/p>\n<p>Here in our home we have enjoyed &lt;really enjoyed!&gt; &#8216;riced&#8217; cauliflower as the pinch-hitter in fried rice, rice pudding, <a href=\"http:\/\/girlfriendscoffeehour.com\/2014\/12\/29\/cauliflower-rice-veggies\/\" target=\"_blank\">Cauliflower&amp;Veggies<\/a>\u00a0and, most recently, in Mexican Rice. \u00a0This Mexican Rice would be a nice side dish to the recipe Dana shared with us last week&#8230; <a href=\"http:\/\/girlfriendscoffeehour.com\/2015\/01\/30\/veggie-burritos\/\" target=\"_blank\">Veggie Burritos<\/a>. \u00a0Season this &#8216;rice&#8217; dish in the ways that your family would enjoy&#8230;toss in some finely diced jalapenos or add a can of chipotle in adobo or simply add a tiny bit of crushed red pepper for some spiciness! \u00a0Enjoy!<\/p>\n<h3 style=\"text-align: center;\">Mexican Cauliflower Rice<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-02-20.47.44.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-24233\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-02-20.47.44-300x224.jpg\" alt=\"2015-02-02 20.47.44\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-02-20.47.44-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/02\/2015-02-02-20.47.44-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n1 medium-sized head of cauliflower, \u201criced\u201d **<br \/>\n2 tablespoons olive oil (or fat of your choice)<br \/>\n1 cup bell peppers (red, yellow, or green), diced<br \/>\n1\/2 onion, diced<br \/>\n2 tablespoons chopped garlic (I use jarred)<br \/>\n1 teaspoon cumin<br \/>\n1 teaspoon oregano<br \/>\n2 teaspoons chili powder (I used chipotle)<br \/>\n1 teaspoon sea salt<br \/>\n1\/2 cup broth (chicken or vegetable)<br \/>\n2 tablespoons tomato paste<br \/>\n1 (14 ounce) can diced tomatoes (I used Rotel brand)<br \/>\nassorted toppings: diced avocado, sour cream, shredded cheese, guacamole<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<blockquote><p>** to make \u201criced\u201d cauliflower, break the head of cauliflower into florets cutting off large stems (save for soup!). place the florets in the bowl of your food processor and pulse until it breaks down and resembles pieces of rice (this only takes 10 or so \u2018pulses\u2019). or you can simply use a cheese (box) grater. always process the cauliflower for \u201crice\u201d while it is still raw.<\/p><\/blockquote>\n<ul>\n<li>heat olive oil in a large saut\u00e9 pan over medium-high heat<\/li>\n<li>add onion and saut\u00e9 for 5 minutes<\/li>\n<li>add diced peppers and continue to saute for additional 5 minutes<\/li>\n<li>lower heat and add chopped garlic and seasonings; stir constantly for 1-2 minutes<\/li>\n<li>add in the \u201criced\u201d cauliflower and stir to mix all veggies and seasonings together<\/li>\n<li>stir in the tomato products and broth; raise heat to medium-high and bring to a boil<\/li>\n<li>cover and lower heat to a simmer<\/li>\n<li>cook \u2018til liquids have been absorbed (20-25 minutes)<\/li>\n<li>taste (carefully!) for additional seasoning<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #f00e0e;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!
