\u00a0Oh&#8230;i <strong><em>really\u00a0<\/em><\/strong>wanted to wow you with some extravagant, lucious, inspiring bowl of yumminess! \u00a0I thought of doing a Norwegian-style fruit soup&#8230;but couldn&#8217;t find just the perfect fruits at this time of year. \u00a0I thought of doing a gluten-free, grain-free paleo version of Chicken and Dumplings&#8230;but had to &#8216;dump&#8217; the dumplings (still working on that!). \u00a0And then I ran across a great deal on a nice, big ham&#8230;and was going to make split pea\u00a0\u00e0 la Gramps (my dad)&#8230;but then when I made this oh-so-full-of-flavor ham stock (who knew?!?), I thought &#8216;Just keep it simple, coleen&#8230;&#8217; \u00a0This is a good soup to round out SoupPalooza 2015. \u00a0It is simple, hearty, flavorful, adaptable. \u00a0And I can tell you&#8230;the guy who has enjoyed soup every day this month was very thankful to come home to a steaming mug-full of this! \u00a0(He told me to tell you that he hopes you enjoy it just as much!)<\/p>\n<p style=\"text-align: left;\">This fits well into our healthy but oh-so-yummy point of view&#8212;full of veggies, full of flavor, low-fat. \u00a0I hope you follow Robert&#8217;s lead and enjoy some soup!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-25-18.51.38.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-24120\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-25-18.51.38-300x224.jpg\" alt=\"2015-01-25 18.51.38\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-25-18.51.38-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-25-18.51.38-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\"> \u00a0Ham<\/span> {NOT <span style=\"color: #808000;\">Split Pea<\/span>} <span style=\"color: #ff9900;\">Soup <\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n1 leftover hambone (with a decent amount of meat attached)<br \/>\n2 tablespoons olive oil<br \/>\n1 onion, diced<br \/>\n6-8 ounces mushrooms (I used Baby Bellas), diced<br \/>\n2 carrots, peeled and diced<br \/>\n1\/2# red or yellow potatoes, peeled and diced (I used baby Yukon gold)<br \/>\n2 medium sweet potatoes, peeled and diced<br \/>\n2 tablespoons chopped garlic (I use jarred)<br \/>\n1 cup canned white kidney beans, drained and rinsed (optional)<br \/>\n1 cup frozen corn kernels<br \/>\n1 cup petite frozen peas<br \/>\n1 teaspoon each dried thyme and tarragon<br \/>\n2 bay leaves<br \/>\nKosher salt and freshly ground black pepper, to taste<br \/>\nmeat from leftover hambone<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span><\/p>\n<ul>\n<li>place hambone into your largest stockpot and add enough cool, filtered water to cover the bone halfway (for me this was about 8 cups)<\/li>\n<li>cover and bring to a boil; reduce heat and simmer for an hour or so; remove hambone<\/li>\n<li>allow to cool slightly and skim off any nasty business from the surface \ud83d\ude09<\/li>\n<li>cut away and set aside all the meat from the bone; discard bone<\/li>\n<li>heat olive oil in another stockpot over medium heat<\/li>\n<li>add onions and mushrooms; saute just \u2018til mushrooms are beginning to caramelize<\/li>\n<li>add diced carrots and potatoes; saute for additional 5 minutes or so<\/li>\n<li>add chopped garlic, stirring constantly for 1 minute<\/li>\n<li>stir in ham stock, beans, corn, peas, and seasonings<\/li>\n<li>bring back to a boil; cover and reduce heat; simmer until potatoes are tender, about 10-12 minutes; remove bay leaves (discard)<\/li>\n<li>add ham pieces; mix in thoroughly and continue to simmer \u2018til heated through, 2-3 minutes<\/li>\n<li>serve hot and steamy\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\">\u2665\u00a0<\/span> <span style=\"color: #808000;\">\u2665\u00a0<\/span><span style=\"color: #ff9900;\"> \u2665\u00a0<\/span> <span style=\"color: #808000;\">\u2665\u00a0<\/span> <span style=\"color: #ff9900;\">\u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!
