{"id":23793,"date":"2015-01-07T00:30:22","date_gmt":"2015-01-07T05:30:22","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=23793"},"modified":"2015-01-06T22:30:33","modified_gmt":"2015-01-07T03:30:33","slug":"roasted-butternut-apple-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/01\/07\/roasted-butternut-apple-soup\/","title":{"rendered":"Roasted Butternut and Apple Soup"},"content":{"rendered":"<p>Did you know that January is <em>National Soup Month<\/em>? \u00a0That is a fact that my husband does not let me overlook. \u00a0He <strong>loves<\/strong> soup&#8230;and would eat soup every single day! \u00a0Here on our <em>healthy but oh-so-yummy<\/em>! segment of the <strong><span style=\"text-decoration: underline;\">At Home w\/ GCH<\/span> <\/strong>blog, we are celebrating our third annual <strong><em>Soup-Palooza<\/em><\/strong>! \u00a0Each week this month we will feature soup, <em>soup<\/em>, <strong>soup.<\/strong>..and <span style=\"color: #ff6600;\"><strong><em>soup<\/em><\/strong><\/span>! \u00a0Use the search feature here on our website to explore other soup recipes that Dana and I have posted in the past.<\/p>\n<p>This week\u2019s recipe spotlights three ingredients that are good for you, and really yummy, too: butternut squash, organic chicken meatballs, and baby kale. Interesting combination, you say? You betcha! I do believe this soup would be equally delicious without the chicken meatballs&#8230;making it perfect to serve as a vegan dish. \u00a0This soup also freezes (and defrosts) beautifully! \u00a0A note on the chicken meatballs: There are a number of brands out there to choose from. <a href=\"https:\/\/aidells.com\/product\/14033\" target=\"_blank\">\u00a0These are the ones <\/a>that I use&#8230;they have no preservatives, no filler, and are organic. \u00a0This company offer quite a variety of products\u2014meatballs and sausages.<\/p>\n<p>Enjoy&#8230;see you back here next week with another soup!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-05-12.51.20.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23814\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-05-12.51.20-300x225.jpg\" alt=\"2015-01-05 12.51.20\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-05-12.51.20-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2015-01-05-12.51.20.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff6600;\">Butternut-Apple Soup with Chicken Meatballs<\/span><\/h3>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<br \/>\n1 medium butternut squash<br \/>\n1 tablespoon olive oil<br \/>\ncinnamon<br \/>\n1 teaspoon EACH sea salt, freshly ground pepper (I use lemon-pepper blend)<br \/>\n1 teaspoon olive oil<br \/>\n1\/2 pkg chicken apple meatballs, cut in quarters<br \/>\n1 small onion, diced<br \/>\n1-2 stalks celery, thin slices<br \/>\n1 medium carrot, shredded<br \/>\n1 tablespoon minced garlic (I use jarred)<br \/>\n1-2 teaspoons herb medley of your choice (thyme, tarragon, crushed rosemary, marjoram)<br \/>\n1-2 large apples, peeled and cubed<br \/>\n6 cups chicken stock<br \/>\n1 cup apple cider<br \/>\n1+ cups water (optional)<br \/>\nbaby arugula<br \/>\nfinely shredded sharp Cheddar (optional)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 400<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2014-12-31-17.26.48.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-23813\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2014-12-31-17.26.48-300x225.jpg\" alt=\"2014-12-31 17.26.48\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2014-12-31-17.26.48-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/01\/2014-12-31-17.26.48.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/li>\n<li>line a baking sheet with parchment paper<\/li>\n<li>cut butternut squash in half; clean out seeds<\/li>\n<li>peel the skin; cut the squash into 1+1\/2&#8243; cubes<\/li>\n<li>place in large mixing bowl along with 1 tablespoon olive oil, a couple of good shakes of cinnamon, and the seasonings; mix together and pour onto lined baking sheet<\/li>\n<li>roast for 20 minutes or so \u2018til the butternut yields easily when you pierce with a knife; remove from oven and set aside<\/li>\n<\/ul>\n<p>meanwhile&#8230;<\/p>\n<ul>\n<li>heat 1 teaspoon olive oil in medium stockpot<\/li>\n<li>add cut-up chicken meatballs and saute \u2018til lightly browned (6-7 minutes)<\/li>\n<li>remove from pan and add the onion, celery and carrot;\u00a0cook about 5 minutes until vegetables are starting to get soft and caramelized<\/li>\n<li>add herbs, apple chunks, garlic, season w\/salt and pepper saute for 1 minute, stirring constantly<\/li>\n<li>add stock, water and cider;
