\u00a0But this dish makes sense once you eat it. \u00a0Black-eyed peas are a good luck food for the New Year in the South, so why not dress it up a little with this interpretation of a French classic? \u00a0I present to you: \u00a0<strong>Southern Cassoulet<\/strong>!<\/p>\n<p>Authentic cassoulet can take several days to prepare, and involves making a duck confit. \u00a0Too expensive and time consuming for me! \u00a0Chicken thighs sub in nicely. \u00a0Cook the black-eyed peas during the day (or use canned). \u00a0To make this even quicker, use two cans of white Northern beans. \u00a0I used just plain smoked sausage, but try out a pound of whatever kind of sausage you like. \u00a0Did you get a big Le Creuset pot for Christmas? \u00a0Now&#8217;s your chance to put your new enameled Dutch oven to the test!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Southern Cassoulet<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 pound dried black-eyed peas (or use two cans of other beans)<\/li>\n<li>1 pound smoked sausage, sliced<\/li>\n<li>2 large carrots,\u00a0chopped<\/li>\n<li>3 \u00a0stalks celery, chopped\u00a0(use the leaves too)<\/li>\n<li>20 whole cloves of garlic (optional, but I thought they were delicious)<\/li>\n<li>1 large sprig of rosemary, minced (or use 1 teaspoon dried rosemary)<\/li>\n<li>4-6 large chicken thighs, skin on, bone in<\/li>\n<li>3 teaspoons olive oil<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Cook the beans in plenty of water until tender. \u00a0This can take two hours or so. \u00a0If you are using canned beans, skip ahead.<\/li>\n<li>In a very large enameled Dutch oven, cook the sausage. \u00a0Add the carrot, celery, garlic cloves, and rosemary. \u00a0Add a little olive oil if things start to stick. \u00a0Saute over medium heat for 10 minutes until the vegetables are soft.<\/li>\n<li>Take the pot off the heat. \u00a0Drain the beans and add them to the sausage and vegetables, and stir to combine. \u00a0Season with salt and pepper. \u00a0On top of the bean mixture, place the chicken thighs, skin-side up. \u00a0Season with salt and pepper, and drizzle with the olive oil.<\/li>\n<li>Bake at 400*F for at least an hour, or until the chicken is cooked through with crispy skin.<\/li>\n<li>Good luck and have a Happy New Year!<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I know, it&#8217;s a weird title &#8211; French and Southern food together?
