Try it even with a sunnyside egg perched on top! I have prepared this as a vegan dish; it is low-carb, dairy-free, nut-freegluten-free, and of course, refined sugar-free! During the past few months, I have been trying different methods of making cauliflower \u2018rice\u2019 (boiled, microwaved, sauteed) but we like it this way\u2014roasted\u2014the best! \u00a0Here are a few of my reasons for saying so:<\/p>\n<ul>\n<li>it is easy-peasy (first and maybe most important!)<\/li>\n<li>roasting adds to the flavor<\/li>\n<li>very little added fat<\/li>\n<\/ul>\n<p>I have read numerous recipes that suggest you can freeze the cauliflower \u2018rice\u2019 after it is cooked. \u00a0I would love to tell you this works great but we never have any leftovers. \ud83d\ude41 But I am purposefully going to try it&#8230;wouldn\u2019t it be great to have some to pull out of the freezer in July!?!<\/p>\n<p>And experiment, please; with Veggies<\/span><\/h3>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>:<\/p>\n<p>2 tablespoons coconut oil (or olive oil or butter)<br \/>\n1 large head cauliflower<br \/>\nsea salt, freshly ground pepper (I used lemon-pepper-salt blend)<br \/>\n2-3 tablespoons coconut oil (or olive oil or butter)<br \/>\n1 sweet onion<br \/>\n2 small zucchini<br \/>\n1\/2# asparagus (or broccoli)<br \/>\n1 cup frozen peas, defrosted<br \/>\n1\/2 small lemon (optional)<br \/>\n<span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 425<\/li>\n<li>line a baking sheet (with a short rim) with parchment paper<\/li>\n<li>break the head of cauliflower into florets cutting off large stems (save for soup!)<\/li>\n<li>place the florets in the bowl of your food processor pulse until it breaks down and resembles pieces of rice (this should take, perhaps, 20 or so \u2018pulses\u2019) NOTE: if you have a <em>really<\/em> large head of cauliflower, do it in two batches to avoid overcrowding<\/li>\n<li>pour the \u2018riced\u2019 cauliflower into a large bowl; sprinkle with seasonings<\/li>\n<li>pour the melted coconut oil over top and quickly toss with two spatulas \u2018til the rice is thoroughly coated with the oil<\/li>\n<li>spread out in a single layer on the lined baking sheet; roast for 20-25 minutes \u2018til tender and just beginning to get a few browned spots<\/li>\n<li>remove from oven and set aside<\/li>\n<\/ul>\n<p>while the cauliflower is roasting&#8230;<\/p>\n<ul>\n<li>heat your largest saute pan and heat the fat of your choice<\/li>\n<li>chop the onion and add to the pan; saute for 5-6 minutes over medium-high heat<\/li>\n<li>prep the rest of veggies while the onion is cooking:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-09-20.21.44.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-23647\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-09-20.21.44-300x225.jpg\" alt=\"2014-11-09 20.21.44\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-09-20.21.44-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-09-20.21.44.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n-shred the zucchini<br \/>\n-thinly slice (on the diagonal is pretty) the asparagus<br \/>\n-zest the lemon; set aside<\/li>\n<li>when onions are just starting to get a bit brown, add in the asparagus slices&#8230;cook for 4-5 minutes; then add in the shredded zucchini and cook for an additional 4-5 minutes \u2018til all veggies are slightly tender. remove pan from heat<\/li>\n<li>add the roasted cauliflower \u2018rice\u2019 to the other veggies;
