\u266a\u266c\u266a Here we are&#8230;approaching Christmas Day! \u00a0Still many tasks to accomplish here! \u00a0How are you doing with your lists? \u00a0Lots of items checked off? \u00a0I am getting there&#8230;<\/p>\n<ul>\n<li>game for the grandkids\u2714<\/li>\n<li>Robert\u2019s birthday card<\/li>\n<li>gift for upstairs neighbor ???<\/li>\n<li>a few additional stocking stuffers<\/li>\n<li>waiting for 3 packages to arrive \u2714\u2714<\/li>\n<\/ul>\n<p style=\"padding-left: 30px;\">and groceries for:<\/p>\n<ul>\n<li style=\"padding-left: 30px;\">Robert\u2019s birthday dinner \u2714<\/li>\n<li style=\"padding-left: 30px;\">Christmas Eve with MKEKLR \u2714<\/li>\n<li style=\"padding-left: 30px;\">Christmas morning \u2714<\/li>\n<li style=\"padding-left: 30px;\">Aldi list<\/li>\n<\/ul>\n<p>But amidst all of these details, what joy is ours as we contemplate just<span style=\"color: #a11e24;\"> HOW MUCH<\/span> God Almighty loves us! \u00a0He cared <span style=\"color: #a11e24;\"><strong>SO<\/strong> MUCH<\/span> for us that He sent His precious Son to the earth to be born as a human and to live amongst men. \u00a0Ultimately, to sacrifice Him to redeem and save us so we could be called His children! <strong><em>\u00a0Hallelujah<\/em><\/strong>&#8230;what a Savior!<\/p>\n<p>I pray for you (and me, too), my friends, that we will\u00a0keep our priorities in order. \u00a0Even if there were no Christmas tree decorated with glittery ornaments and special momentos&#8230;if there were no carols to sing&#8230;if there were not piles of beautifully wrapped presents under the tree&#8230;we would still have MUCH to be singing God\u2019s praises and thanking Him for as we remember the <span style=\"color: #a11e24;\"><em>reason for the season<\/em><\/span>\u2014<strong><span style=\"color: #a11e24;\">Jesus<\/span><\/strong> our Savior.<\/p>\n<p style=\"text-align: center;\">For unto you is born this day<br \/>\nin the city of David a Savior,<br \/>\nwhich is Christ the Lord.<br \/>\nGlory to God in the highest,<br \/>\nand on earth peace, good will toward men.<br \/>\nLuke 2:11,14<\/p>\n<p style=\"text-align: center;\"><span style=\"color: #a11e24;\"> \u00a0* \u00a0 \u00a0\u2665 \u00a0~ \u00a0\u271d \u00a0~ \u00a0\u2605 \u00a0 \u00a0* <\/span><\/p>\n<p>Here\u2019s our menu for a simple Christmas morning breakfast:<br \/>\nfruit salad<br \/>\nmini quiche<br \/>\nspicy Thai tea<\/p>\n<p>The best part about this breakfast will be that it can all be prepared ahead of time! \u00a0When we are ready to eat, just pop some mini-quiche into the toaster oven to reheat, dish out some of the fruit salad, and pour beverages; love it! \u00a0Oh!&#8230;there is one important tip to success with these mini-quiche: the fillings (veggies and meat) should be cut up fairly small. \u00a0 Whenever I make this recipe, i quadruple (yes, i DO!) the ingredients. \u00a0These little two-bite quiches freeze beautifully. \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-12-21-21.01.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23558\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-12-21-21.01.42-300x224.jpg\" alt=\"2014-12-21 21.01.42\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-12-21-21.01.42-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-12-21-21.01.42-1024x764.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #a11e24;\">Mini Quiche<\/span> (makes one dozen)<\/h3>\n<h4>egg filling:<\/h4>\n<p>3 large eggs<br \/>\n1\/2 cup milk (I used coconut milk)<br \/>\n1\/4 teaspoon kosher salt, freshly ground black pepper<\/p>\n<ul>\n<li>whisk these 4 ingredients together, thoroughly blending the eggs<\/li>\n<li>pour into a container with a spout (for ease in filling muffin tin) and set aside<\/li>\n<\/ul>\n<h4>Spinach&amp;Swiss with Bacon<\/h4>\n<p>1\/2 cup frozen chopped spinach, defrosted<br \/>\n2 slices bacon, cooked and crumbled<br \/>\n4 tablespoons chopped onion<br \/>\n1+ tablespoons dried dill or tarragon<br \/>\n1\/2-3\/4 cup finely grated Swiss cheese<\/p>\n<p>place spinach in colander, allow to defrost, and then squeeze dry (with your hands); set aside preheat oven to 375<br \/>\ngrease with melted butter (or spray with cooking spray) your mini muffin tin; be thorough<br \/>\ncook bacon, cool, and crumble<br \/>\nsaute onion in a bit of the bacon drippings until soft<br \/>\nwhen done, mix with spinach and herbs; let mixture cool<br \/>\nevenly distribute the veggies, the bacon, and the cheese among the muffin cups; these should be at least 1\/2 full<br \/>\nthen carefully pour the prepared Egg Filling mixture into each muffin cup. fill almost full but do not overfill!<br \/>\nbake for approximately 12-15 minutes until the eggs puff and are lightly golden brown<br \/>\nremove from oven; let sit for 10 minutes, then carefully remove from muffin tin. if you have thoroughly greased your muffin tin in preparation, this shouldn\u2019t be too hard. I used a small, flexible spatula\u2014but a teaspoon or small knife will do\u2014and just run it around the edge of each quiche to loosen. serve immediately.<\/p>\n<h4>Broccoli-Cheddar with Ham<\/h4>\n<p>4 tablespoons chopped onion<br \/>\n1\/2 cup chopped broccoli (cooked and cooled; I used frozen)<br \/>\n1\/2 cup cooked ham, chopped small<br \/>\n1+ tablespoons dried crushed rosemary or marjoram<br \/>\n1\/2-3\/4 cup of finely grated sharp Cheddar<br \/>\ncoconut or olive oil<\/p>\n<p>preheat oven to 375<br \/>\ngrease with melted butter (or spray with cooking spray) your mini muffin tin; be thorough<br \/>\ncook ham cubes for 2-3 minutes, set aside to cool<br \/>\nsaute onion in a bit of olive oil until soft<br \/>\nwhen done, mix with broccoli and herbs; let mixture cool<br \/>\nevenly distribute the veggies, the ham, and the cheese among the muffin cups; these should be at least 1\/2 full<br \/>\nthen carefully pour the prepared Egg Filling mixture into each muffin cup. fill almost full but do not overfill!<br \/>\nbake for approximately 12-15 minutes until the eggs puff and are lightly golden brown<br \/>\nremove from oven; let sit for 10 minutes, then carefully remove from muffin tin. if you have thoroughly greased your muffin tin in preparation, this shouldn\u2019t be too hard.
