I have found, however, that almost all the recipes in my Crockpot cookbooks are for meat-based entrees. That&#8217;s all well and good, but there are some times you want something lighter, or vegetarian (or that isn&#8217;t made with a can of cream of chicken soup!) I ordered a book on Amazon.com, hoping to find something new and different, and I did: &#8220;<a href=\"http:\/\/www.amazon.com\/Fresh-Vegetarian-Slow-Cooker-Recipes\/dp\/1558322566\/ref=tmm_pap_title_0?ie=UTF8&amp;qid=1415922262&amp;sr=1-1\" target=\"_blank\">Fresh From the Vegetarian Slow Cooker<\/a>&#8221; by Robin Robertson.<\/span><\/span><\/p>\n<div>The recipe for Black Bean Soup was easy to follow, and I had everything I needed for it already in my pantry and fridge &#8211; and I&#8217;m betting you do, too. This came out better than I expected! \u00a0The texture was both chunky and smooth after I used my immersion blender (you can put your soup in the blender or food processor and pulse lightly, or even use a potato masher to get your desired consistency.)<\/div>\n<div><\/div>\n<div><span class=\"Apple-style-span\">Serve this with chopped green onions, cilantro, sour cream, shredded cheese, salsa, tortilla chips&#8212;any or all of the above. \u00a0Terrific!<\/span><\/div>\n<div><span class=\"Apple-style-span\">\u00a0<\/span><\/div>\n<div><span class=\"Apple-style-span\">(Sorry about the photo. It&#8217;s bean soup, and it&#8217;s delicious and nutritious, but there&#8217;s just no way to make it look glamorous in a photo!)<\/span><\/div>\n<div><\/div>\n<div><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/gchdanablackbeansoup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22826\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/gchdanablackbeansoup.jpg\" alt=\"gchdanablackbeansoup\" width=\"400\" height=\"266\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/gchdanablackbeansoup.jpg 400w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/gchdanablackbeansoup-300x199.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/div>\n<div><\/div>\n<div><span class=\"Apple-style-span\">\u00a0<\/span><\/div>\n<div><span class=\"Apple-style-span\"><b>Black Bean Soup<\/b><\/span><\/div>\n<div><span class=\"Apple-style-span\">(recipe courtesy &#8220;Fresh From the Vegetarian Slow Cooker&#8221; by Robin Robertson)<\/span><\/div>\n<div><span class=\"Apple-style-span\">\u00a0<\/span><\/div>\n<div><span class=\"Apple-style-span\">Ingredients:<\/span><\/div>\n<div>\n<ul>\n<li><span class=\"Apple-style-span\">1 tablespoon olive oil<\/span><\/li>\n<li><span class=\"Apple-style-span\">1 medium onion, chopped<\/span><\/li>\n<li><span class=\"Apple-style-span\">1 carrot, chopped<\/span><\/li>\n<li><span class=\"Apple-style-span\">1\/2 green (I used red) bell pepper, seeded and minced<\/span><\/li>\n<li><span class=\"Apple-style-span\">2 garlic cloves, minced<\/span><\/li>\n<li><span class=\"Apple-style-span\">2 cans (15.5-ounces each) black beans, drained and rinsed<\/span><\/li>\n<li><span class=\"Apple-style-span\">1 can diced tomatoes, left undrained<\/span><\/li>\n<li><span class=\"Apple-style-span\">4 cups stock (I used less, probably closer to 3 cups)<\/span><\/li>\n<li><span class=\"Apple-style-span\">2 bay leaves<\/span><\/li>\n<li><span class=\"Apple-style-span\">1 teaspoon ground cumin<\/span><\/li>\n<li><span class=\"Apple-style-span\">1 teaspoon dried thyme<\/span><\/li>\n<li><span class=\"Apple-style-span\">1\/4 teaspoon cayenne pepper<\/span><\/li>\n<li><span class=\"Apple-style-span\">salt and pepper<\/span><\/li>\n<li><span class=\"Apple-style-span\">2 teaspoons fresh lemon juice (optional)<\/span><\/li>\n<\/ul>\n<div><span class=\"Apple-style-span\">Directions:<\/span><\/div>\n<\/div>\n<div>\n<ol>\n<li><span class=\"Apple-style-span\"><span class=\"Apple-style-span\">Heat oil in a large skillet over medium heat. Add the <\/span><span class=\"Apple-style-span\">onion, carrot, bell pepper, and garlic; cover and cook until softened, about 5 minutes.<\/span><\/span><\/li>\n<li><span class=\"Apple-style-span\">Transfer the cooked vegetables to a slow cooker, add the beans, tomatoes and their juice, stock, bay leaves, cumin, thyme, and cayenne, and season with salt and black pepper. Stir to combine. Cover and cook on LOW for 8 hours.<\/span><\/li>\n<li><span class=\"Apple-style-span\">Remove and discard the bay leaves and taste to adjust the seaosonings. \u00a0Just before serving, stir in the lemon juice, if using.
