You will not get tipsy from your entree, I promise! \u00a0Make sure you use a wine that you will want to drink, because this recipe leaves you enough for a glass or two with dinner. \u00a0You can use red &#8211; like cabernet sauvignon, merlot, or pinot noir &#8211; or white &#8211; like pinot grigio or chardonnay. \u00a0Don&#8217;t use anything sweet, though. \u00a0Nice and dry is the secret. \u00a0And if you are really, really opposed to wine&#8230;you can use beef broth instead.<\/p>\n<p>This recipe also calls for dried mushrooms. \u00a0I get big bags of dried, sliced shiitake mushrooms at the Korean supermarket. \u00a0Any Asian grocery store should carry dried mushrooms for cheap. \u00a0If you can&#8217;t find them, you can use fresh button or cremini mushrooms. \u00a0The difference will be the cooking time &#8211; you&#8217;ll need to saut\u00e9 them for longer so that you can cook most of the water out of them. \u00a0Just experiment until it looks right &#8211; it&#8217;s not rocket science.<\/p>\n<p>Ready for a fall stew that will warm your belly and delight your tastebuds? \u00a0Let&#8217;s go!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Beef Stroganoff<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/2 to 2 pounds ground beef<\/li>\n<li>1 large onion, sliced<\/li>\n<li>1 cup dried, sliced mushrooms (or use one pound fresh mushrooms, sliced)<\/li>\n<li>2 cups dry red or white wine<\/li>\n<li>1 tablespoon fresh snipped dill (or use 1\/2 teaspoon dried dill)<\/li>\n<li>1\/4 teaspoon smoked paprika (optional, but nice)<\/li>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>1 cup whole milk yogurt (or use sour cream or creme fraiche)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>If using dried mushrooms: \u00a0In a bowl, pour in one cup of the wine. \u00a0Microwave for about a minute so it&#8217;s hot, or at least very warm. \u00a0Add the dried mushrooms to the hot wine to rehydrate them. \u00a0Place another bowl on top so the mushrooms stay submerged in the wine. \u00a0Let steep until Step 3.<\/li>\n<li>In a large pot, brown the ground beef. \u00a0You don&#8217;t need to add any extra fat, since the fat will melt out of the meat. \u00a0When brown, remove beef with a slotted spoon to a bowl. \u00a0Leave the fat and juices in the pot.<\/li>\n<li>Add the sliced onion to the pot and saut\u00e9 over medium. \u00a0If using fresh mushrooms, add them together with the onion. \u00a0If using dried mushrooms, add the mushrooms AND the wine they were soaking in when the onion starts to turn golden, about 8 minutes.<\/li>\n<li>When the mushrooms and onion are soft and golden, add the beef back to the pot, along with the other cup of wine, the dill, paprika, and mustard. \u00a0Cover with a lid and turn the heat to low. \u00a0Simmer for 5 minutes to combine.<\/li>\n<li>Turn off the heat, stir in the yogurt, and serve hot.<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe is one of my favorites in the &#8220;Comfort Food&#8221; category. \u00a0Beef Stroganoff is easy and filling, especially if you serve it over rice or noodles. \u00a0We just eat it straight from the bowl, paired with a salad or roasted vegetables.
