{"id":22315,"date":"2014-10-17T00:30:31","date_gmt":"2014-10-17T04:30:31","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=22315"},"modified":"2014-10-16T23:51:22","modified_gmt":"2014-10-17T03:51:22","slug":"barley-shiitake-risotto","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/10\/17\/barley-shiitake-risotto\/","title":{"rendered":"Barley Shiitake Risotto"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/10\/Barley-Shiitake-Risotto-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-22355\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/10\/Barley-Shiitake-Risotto-resize-300x225.jpg\" alt=\"Barley Shiitake Risotto resize\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/10\/Barley-Shiitake-Risotto-resize-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/10\/Barley-Shiitake-Risotto-resize-1024x768.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/10\/Barley-Shiitake-Risotto-resize.jpg 1348w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Sometimes I have to peek in my pantry and decide, &#8220;Enough is enough!&#8221; \u00a0Time to use up those odds and ends of things. \u00a0I had about a cup of barley left in a bag, so I went in search of a recipe for it. \u00a0I found one, made some tweaks, and now I present to you: \u00a0<strong>Barley Shiitake Risotto<\/strong>!<\/p>\n<p>Barley has a fantastic texture: \u00a0firmer than rice, closer to a chewy and delicious wheat berry. \u00a0It is wonderful in stews and soups, but it is strong enough to be a star on its own. \u00a0This recipe calls for dried mushrooms. \u00a0You can use any kind of dried mushroom. \u00a0I buy dried shiitake mushrooms at the Korean market, and they&#8217;re much cheaper there than what you&#8217;ll pay for dried mushrooms at a regular grocery store. \u00a0For the broth, I made bone broth&#8230;but you can use any kind&#8212;chicken, beef, or even vegetable broth, that you like. \u00a0The original recipe called for grated parmesan, which I didn&#8217;t have. \u00a0I used a very hard white cheddar. \u00a0You can use any hard cheese you like &#8211; if you can grate it, you can use it here!<\/p>\n<p>This is not a forget-it-type recipe. \u00a0You do need to stir it every few minutes to get the right texture. \u00a0Just start this on the stove while you&#8217;re making a salad or prepping the rest of your dinner and it will all work out&#8230;I promise!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Barley Shiitake Risotto<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 cup dried shiitake mushrooms (or other dried mushroom)<\/li>\n<li>1 cup white wine<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>1\/2 small onion<\/li>\n<li>2 cloves garlic<\/li>\n<li>1 cup barley<\/li>\n<li>4-5 cups broth<\/li>\n<li>salt and pepper to taste<\/li>\n<li>1\/4 cup grated hard cheese (parmesan, very firm white cheddar, or other cheese)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Put the dried shiitake mushrooms in a bowl. \u00a0Pour over the white wine. \u00a0Put another bowl on top of the mushrooms so that they remain submerged in the wine and microwave for 30-60 seconds. \u00a0Let the mushrooms rehydrate while you work on step 2.<\/li>\n<li>Mince the onion fine. \u00a0In a large, heavy-bottomed pot, heat the olive oil, and add the onion. \u00a0Stir over medium heat. \u00a0You want the onions to turn golden. \u00a0Meanwhile, in a smaller pot, heat the broth to a simmer. \u00a0Keep it simmering over low heat.<\/li>\n<li>Mince the garlic, and add garlic and barley to the pan with the onions. \u00a0Stir to combine, cooking for 3 minutes.<\/li>\n<li>Squeeze the mushrooms over the bowl and chop. \u00a0Add the mushrooms and the wine from the bowl to the barley.<\/li>\n<li>When the wine is almost all absorbed, add a ladle-full of broth. \u00a0Stir to combine. \u00a0Repeat this process, adding more broth every five minutes or so, when the last addition of broth is nearly absorbed. \u00a0You don&#8217;t want the pan to get dry, but you don&#8217;t want to make soup either. \u00a0This should take about 30 minutes for all of the broth to be added, stirred, and absorbed.<\/li>\n<li>After all the broth is added, taste a bit of the barley. \u00a0It should be firm and chewy. \u00a0If it&#8217;s still dry and not al dente, add more stock or water.<\/li>\n<li>When barley is done&#8212;chewy and al dente&#8212;season with salt and pepper. \u00a0Stir in grated cheese and serve hot.
