(Do they still offer that in schools?) \u00a0I liked it so much, I brought the recipe home and asked my Mom if I could make dinner for the family for the first time. \u00a0I did &#8211; and it was a success! \u00a0How&#8217;s that for boosting your kitchen self-confidence? \u00a0Your kids can make this too: \u00a0<span style=\"text-decoration: underline;\"><strong>Chicken and Rice<\/strong><\/span>!<\/p>\n<p>There are any number of variations you do make: \u00a0add onions or garlic to the rice. \u00a0Saut\u00e9 the mushrooms in wine and herbs before you add them to the casserole. \u00a0Marinate the chicken in Italian dressing first. \u00a0Parboil brown rice and use that instead of white rice. \u00a0The sky is the limit, or you can keep it simple. \u00a0I made it like this last night and my whole family loved it. \u00a0Yours will too!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Chicken and Rice<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 can cream of mushroom soup<\/li>\n<li>1 can of milk (see below)<\/li>\n<li>1 cup white rice<\/li>\n<li>8 ounces fresh mushrooms, chopped<\/li>\n<li>6 boneless, skinless chicken thighs<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat the oven to 375*F. \u00a0In a large casserole or baking dish, spray some cooking spray on the bottom and sides. \u00a0Evenly place the six chicken thighs in the dish. \u00a0Season with salt and pepper.<\/li>\n<li>In a large bowl, empty the can of cream of mushroom soup. \u00a0Fill that empty can with milk and mix with the soup. \u00a0Add in the rice. \u00a0Chop the mushrooms and add to the soup mixture. \u00a0Add salt and pepper, stir, and pour over the chicken. \u00a0You want the rice mixture to be evenly distributed in the dish. \u00a0Depending on the size of your dish, that may mean it nearly covers the chicken, or not even halfway. \u00a0Just spread it out so it lies pretty flat.<\/li>\n<li>Cover the dish with foil and bake for an hour. \u00a0Check for doneness &#8211; you want the thighs to be 175*F. \u00a0Serve hot!<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; This is a recipe I learned when I was in 7th grade Home Economics.
