{"id":21398,"date":"2014-08-22T00:30:28","date_gmt":"2014-08-22T04:30:28","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=21398"},"modified":"2014-08-21T19:25:47","modified_gmt":"2014-08-21T23:25:47","slug":"korean-style-tuna-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/08\/22\/korean-style-tuna-salad\/","title":{"rendered":"Korean-Style Tuna Salad"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Korean-Tuna-Salad-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-21399 size-medium\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Korean-Tuna-Salad-resize-300x225.jpg\" alt=\"Korean Tuna Salad resize\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Korean-Tuna-Salad-resize-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Korean-Tuna-Salad-resize-1024x768.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Korean-Tuna-Salad-resize.jpg 1284w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Now that school is starting up again, it&#8217;s time for some lunchbox ideas. \u00a0One of my favorites as a kid was tuna salad. \u00a0Growing up, I had it\u00a0only two ways: \u00a0with mayonnaise, and the way my Mom made it, which was with mayo and chopped celery. \u00a0It wasn&#8217;t until I was in high school that I had tuna salad made with mayo and pickle relish. \u00a0(Thanks, Mrs. Carson!) \u00a0It&#8217;s really easy to believe that a food will only taste good if prepared in the way you&#8217;re familiar with. \u00a0I mean, even 15 years ago, I would have been hard-pressed to believe that I would like tuna salad made without mayonnaise. \u00a0But old dogs can learn new tricks, so here I present to you: \u00a0<strong>Korean-Style Tuna Salad<\/strong>!<\/p>\n<p>My husband asked me to make this for him several years ago, because this is the way he grew up eating canned tuna. \u00a0Believe it or not, Koreans do enjoy tuna salad, and even make a dish called Tuna Kimbap with it &#8211; tuna salad rolled up in rice and seaweed (kind of a Korean sushi roll.) \u00a0In this Korean-style dish, the mayonnaise is gone, replaced by savory sesame oil. \u00a0The celery is joined by minced carrot and green onion, and the whole dish is seasoned with a little vinegar and a healthy shake of sesame seeds. \u00a0It&#8217;s a whole new take on tuna!<\/p>\n<p>Try this wrapped in lettuce or served on crackers for lunch. \u00a0Ready to break out of your comfort food comfort zone? \u00a0Let&#8217;s go!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Korean-Style Tuna Salad<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 cans tuna, drained<\/li>\n<li>2 green onions<\/li>\n<li>1 large carrot<\/li>\n<li>2 celery stalks<\/li>\n<li>2 tablespoons sesame oil (or more, to taste)<\/li>\n<li>1 teaspoon rice vinegar (or use lemon juice)<\/li>\n<li>2 tablespoons sesame seeds<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a mixing bowl, add the tuna.<\/li>\n<li>Finely mince the green onion, carrot, and celery. \u00a0Add to the tuna.<\/li>\n<li>Pour in the sesame oil and rice vinegar. \u00a0Toss to combine.<\/li>\n<li>In a small bowl, combine\u00a0the sesame seeds and salt.
