{"id":21247,"date":"2014-08-15T00:30:46","date_gmt":"2014-08-15T04:30:46","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=21247"},"modified":"2014-08-14T19:23:07","modified_gmt":"2014-08-14T23:23:07","slug":"fruity-energy-bars","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/08\/15\/fruity-energy-bars\/","title":{"rendered":"Fruity Energy Bars"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Fruity-Energy-Bars-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21255\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Fruity-Energy-Bars-resize-300x225.jpg\" alt=\"Fruity Energy Bars resize\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Fruity-Energy-Bars-resize-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Fruity-Energy-Bars-resize-1024x768.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/08\/Fruity-Energy-Bars-resize.jpg 1092w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I&#8217;ve got a lot of hoops to jump through when it comes to making snacks for my girls. \u00a0I try to eat Paleo myself, and while I do serve my girls grains and legumes, I am always searching for recipes that rely on Paleo ingredients first. \u00a0Next, my older daughter is allergic to peanuts and tree nuts. \u00a0That eliminates a giant swath of choices in the Paleo category, which excludes grains in favor of nuts. \u00a0So for baking, that leaves me either coconut products (which we love and use often), or seeds, like pepitas or sunflower seeds. \u00a0I found a recipe that sounded good, reconfigured it for our needs, and now I proudly present: \u00a0<strong>Fruity Energy Bars<\/strong>!<\/p>\n<p>In the grocery store, you&#8217;ll find half an aisle dedicated to energy and granola bars. \u00a0I love them and I love that, for the most part, they&#8217;re healthy and nutritious. \u00a0They are, however, kind of pricy &#8211; sometimes two or three dollars a bar! \u00a0And it seems like the ones with the fewer ingredients are even more expensive! \u00a0(I&#8217;m looking at you, Larabar!) \u00a0Now, these Fruity Energy Bars couldn&#8217;t be quicker &#8211; just three minutes in the food processor, and about half an hour to chill and firm up. \u00a0I think you could easily exchange the dried cranberries for another dried fruit &#8211; apples, apricots, raisins, prunes, or cherries would all work. \u00a0If you want to use nuts instead of sunflower seeds, try almonds or walnuts. \u00a0They do warm up very quickly and get soft, so keep them in the fridge until ready to eat. \u00a0Ready?
