all things coming into season now! \u00a0Why not try this <strong>Summer Vegetable Curry<\/strong>?<\/p>\n<p>You really can&#8217;t mess this up or go wrong. \u00a0Don&#8217;t like garbanzo beans? \u00a0Use another bean, or switch them out for green peas or bite-sized green beans. \u00a0Like it spicy? \u00a0Add some chopped jalape\u00f1os or another chili of your choice. \u00a0Use whatever curry powder you have. \u00a0Out of coconut milk? \u00a0Use water or broth instead. \u00a0I didn&#8217;t have any\u00a0cilantro, or I would have chopped up a few tablespoons to stir in right before serving. \u00a0See? \u00a0There is no wrong way.<\/p>\n<p>For a vegetarian meal, double the amount of beans and serve over basmati rice. \u00a0Paleo? \u00a0Skip the beans altogether and serve this curry as a side dish to your favorite protein. \u00a0Ready? \u00a0Let&#8217;s go!<\/p>\n<p><strong><span style=\"text-decoration: underline\">Summer Vegetable Curry<\/span><\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large onion<\/li>\n<li>2 tablespoons ghee, butter, or oil<\/li>\n<li>1 tablespoon mustard seeds<\/li>\n<li>1 tablespoon cumin seeds<\/li>\n<li>1 tablespoon curry powder (or more, to taste)<\/li>\n<li>1\/2 \u00a0can coconut milk<\/li>\n<li>2 skinny eggplants<\/li>\n<li>3 zucchinis<\/li>\n<li>1 can garbanzo beans or 1 cup of rehydrated and cooked dried garbanzos<\/li>\n<li>cilantro, raw tomato, and rice (optional) \u00a0for serving<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a very large pot, heat the ghee or butter. \u00a0Chop the onion and add to the pot, along with the mustard and cumin seeds. \u00a0Fry on medium heat for about 5 minutes, until the onion becomes translucent. \u00a0Then add the curry powder and coconut milk and reduce heat.<\/li>\n<li>Cut the eggplants and zucchinis into thin half-moons. \u00a0Add to the pot, stir to mix, and cover. \u00a0Cook over low heat for about 25 minutes until the vegetables are soft, stirring occasionally to ensure nothing sticks to the bottom of the pot.<\/li>\n<li>Taste for seasoning &#8211;
