They were nicely priced at $3.49 for a 16 ounce package of four burgers. They are made with all-natural ingredients, no preservatives&#8230;and are high in protein, low in fat. All which fit right in here with our healthy but oh-so-yummy POV! Do you have a Trader Joe\u2019s near to you? If you haven\u2019t shopped there yet, I would heartily encourage you to give them a try! But, what to serve with them&#8230;this was my question. Hmmmmm&#8230;.something quick, healthy, fresh&#8230;? \u00a0I googled \u2018&#8230;lime, mango, salad&#8230;\u2019 and was presented with quite a list and variety of choices. After reading a few recipes, I had a pretty good idea and a plan of action. We were quite satisfied with the burgers and this <strong>Black Bean, Corn, and Mango salad with Honey-Lime Vinaigrette<\/strong>\u00a0to accompany the burgers. This makes quite a large bowlful (I\u2019d venture to say 9-10 cups or so). So consider making this as a side dish to bring along to a BBQ this summer. Enjoy!<\/p>\n<h3><span style=\"color: #ff9900;\">Black Bean, Corn and Mango Salad w\/ Honey-Lime Vinaigrette<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-23-20.23.00.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20945\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-23-20.23.00-300x225.jpg\" alt=\"2014-07-23 20.23.00\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-23-20.23.00-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-23-20.23.00.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n<span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span>\u00a0:<br \/>\n<strong>salad:<\/strong><br \/>\n2 cup fresh or frozen corn, thawed<br \/>\n1 (15 ounce) can black beans, drained and rinsed<br \/>\n1 (15 ounce) can small white beans, drained and rinsed<br \/>\n1\/2 small sweet onion, sliced thin<br \/>\n1 red bell pepper, cored, seeded, and cut into 1\/2-inch pieces<br \/>\n1 yellow bell pepper, cored, seeded, and cut into 1\/2-inch pieces<br \/>\n1 large mango, peeled, seeded, and cut into 1\/2-inch pieces<\/p>\n<p><strong>vinaigrette<\/strong>:<br \/>\n2 small (or 1 large) limes<br \/>\n2 tablespoons honey<br \/>\n2 tablespoons balsamic vinegar<br \/>\n1\/4 cup mango (or orange) juice<br \/>\n1\/3 cup olive oil<br \/>\nsea salt, freshly ground black pepper<br \/>\nsprinkle of ground red pepper (optional)<\/p>\n<p><strong>garnish<\/strong>:<br \/>\n1\/4 cup chopped fresh basil leaves (optional)<br \/>\nzest from the limes<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>in a large mixing bowl, combine veggies, beans, and mango<\/li>\n<li>zest the limes (putting the zest aside \u2018til the end), and squeeze all the juice from the limes<\/li>\n<li>combine lime juice, honey, balsamic, and mango juice using a blender, food processor, or simply whisk by hand<\/li>\n<li>slowly pour in the olive oil in a slow steady stream \u2018til it is fully incorporated with the liquids<\/li>\n<li>season the vinaigrette to taste with salt and pepper (and the red pepper, if using)<\/li>\n<li>pour the majority of the vinaigrette over the salad, and stir thoroughly but gently to combine (adding more of the vinaigrette, if necessary)<\/li>\n<li>allow to set at room temperature for 20-30 minutes to combine flavors (or place in refrigerator \u2018til ready to serve)<\/li>\n<li>when ready to serve, garnish with the lime zest and basil strips<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\">\u2665 \u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665<\/span><\/p>\n<p>God loves you!<span style=\"color: #ff9900;\">\u00a0<\/span><span style=\"color: #ff6600;\"><span style=\"color: #ff9900;\">\u00a0\u2665\u00a0<\/span><span style=\"color: #ffcc00;\">\u00a0<\/span><\/span>(Please don\u2019t\u00a0<strong>ever<\/strong>\u00a0forget that!)<\/p>\n<p><span style=\"color: #ff9900;\">\u2665\u00a0\u00a0<\/span>coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recently I made a happy little find at Trader Joe\u2019s! \u00a0These Chile-Lime Chicken Burgers.
