The other day he specifically asked me to make quesadillas. &#8220;Why, sure I will!&#8221; \u00a0\ud83d\ude09 But I was a bit stymied how to \u2018lighten them up\u2019 from being cheese bombs in our tummies&#8230;AND fit them here into our<em> healthy but oh-so-yummy<\/em> POV. \u00a0But then I realized it was simple: ease up on the cheese, and add lots of veggies! \u00a0That was easy!<\/p>\n<p>Oh, there\u2019s just one not-so-easy step\u2014the flipping! \u00a0Here\u2019s what I did&#8230;but if you have a better method&#8230;bring it on! \u00a0(Please!) \u00a0When the bottom tortilla has browned off just a bit (3 minutes or so), slide it carefully out of the pan onto a dinner plate. Then, invert ANOTHER dinner plate on top, hold them together now, flip over, remove the top plate and slide the tortilla back into the pan with the browned side facing up now! \u00a0If I can do it, then I have no doubt that you, too, can do it! \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-19.09.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20833\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-19.09.42-300x225.jpg\" alt=\"2014-07-20 19.09.42\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-19.09.42-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-19.09.42.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #99cc00;\">Lime Shrimp Quesadillas<\/span><\/h3>\n<p style=\"text-align: center;\">(makes 2 or 3 finished quesadillas; serves 2-3)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Shrimp<\/strong><\/span><br \/>\n<strong><em>ingredients<\/em><\/strong>:<br \/>\n12 oz medium to large raw shrimp<\/p>\n<p style=\"padding-left: 30px;\"><em>lime marinade<\/em>:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.45.29.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-20832\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.45.29-300x225.jpg\" alt=\"2014-07-20 18.45.29\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.45.29-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.45.29.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nzest of 1\/2 large lime<br \/>\n1\/2 teaspoon dried oregano<br \/>\n1\/2 teaspoon sea salt<br \/>\n1\/2 teaspoon freshly ground pepper<br \/>\n2 tablespoons olive oil<br \/>\njuice of 1\/2 large lime<br \/>\n2 teaspoons minced garlic (I use jarred)<\/p>\n<p><em><strong>directions<\/strong><\/em>:<\/p>\n<ul>\n<li>\u00a0in a medium glass bowl, whisk together marinade ingredients<\/li>\n<li>add peeled shrimp; set aside for 15 minutes<\/li>\n<li>thread onto 2-3 wooden skewers<\/li>\n<li>grill over indirect heat for 2-3 minutes per side; don&#8217;t overcook!<\/li>\n<li>remove from skewers; set aside<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Veggies<\/strong><\/span><br \/>\n<strong><em>ingredients<\/em><\/strong>:<br \/>\n2 tablespoons vegetable oil<br \/>\n1 sweet onion, sliced into halfmoons<br \/>\n1 red bell pepper, sliced<br \/>\n1 yellow bell pepper, sliced<br \/>\n1 teaspoon salt<br \/>\n1 teaspoon ground cumin<br \/>\n1 teaspoon chili powder<\/p>\n<p><strong><em>directions<\/em><\/strong>:<\/p>\n<ul>\n<li>saute veggies in olive oil over medium high heat for 7-8 minutes, allowing to brown just a bit<\/li>\n<li>remove from heat; set aside<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Assembly<\/strong><\/span><br \/>\n12 oz +\/- monterey jack cheese, shredded (or similar)<br \/>\n4-6 flour tortillas (I used gluten free)<br \/>\n1 tablespoon butter<br \/>\n<em><strong>directions<\/strong><\/em>:<\/p>\n<ul>\n<li>in a large nonstick saute pan, melt 1\/2 tablespoon butter over low heat; raise temp to medium-high when prepared to start cooking<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.51.06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-20834\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.51.06-300x225.jpg\" alt=\"2014-07-20 18.51.06\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.51.06-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/07\/2014-07-20-18.51.06.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/li>\n<li>place 1 tortilla shell in bottom of pan<\/li>\n<li>layer 2-3 oz shredded cheese, some of the sauteed veggies and some of the shrimp (the amount you use will depend on whether you are making 2 or 3 completed quesadillas)<\/li>\n<li>top with a second tortilla shell; pressing down so everything will begin to adhere together<\/li>\n<li>allow bottom tortilla to slightly brown; then flip so other side can brown also<\/li>\n<li>slide out onto a plate, cut into quarters<\/li>\n<li>(if making more than 2 or 3, keep warm in oven)<\/li>\n<\/ul>\n<p><strong> serve with<\/strong> guacamole, sour cream, mango dipping sauce, salsa&#8230;or ?
