{"id":20316,"date":"2014-06-23T00:30:54","date_gmt":"2014-06-23T04:30:54","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=20316"},"modified":"2014-06-22T22:21:07","modified_gmt":"2014-06-23T02:21:07","slug":"lemon-y-shrimp-pasta-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/06\/23\/lemon-y-shrimp-pasta-salad\/","title":{"rendered":"Lemon-y Shrimp Pasta Salad"},"content":{"rendered":"<p>Here in the NorthEast we are still waiting for the hot days of summer to arrive (not that I am complaining one tiny little bit!). \u00a0But this is surely the season for one dish salads that will be a complete meal. \u00a0It could be a pasta salad, like this recipe, or a nice full dinner salad! \u00a0Eating lighter meals on hot days certainly seems a more welcome choice&#8230;as well as meals that don\u2019t require turning on the oven!<\/p>\n<p>We love pasta salads! \u00a0But since we\u2019ve made the choice to eat gluten free, I have found that pasta that holds up well when it is refrigerated and coated with a dressing has been difficult to find. \u00a0However, recently I purchased some <a href=\"http:\/\/www.ronzoniglutenfree.com\/\" target=\"_blank\">Ronzoni brand gluten free pasta <\/a>that is excellent! \u00a0(Here is a link AND a coupon!) \u00a0It is made with a multi-grain blend of white rice, brown rice, corn, and quinoa\u2014nice texture (both hot AND cold), good taste, and holds up well as leftovers. \u00a0If you have eaten gluten free pasta before, you know that these three qualities are NOT always a given! \u00a0I have served this pasta to friends and family who couldn\u2019t tell that it was a gluten free product. \u00a0Happy me! \u00a0Perhaps you might want to give it a try! \u00a0Enjoy!<\/p>\n<p><strong>Lemon-y Shrimp Pasta Salad<\/strong> (makes 4-5 generous servings)<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-18-12.05.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20319\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-18-12.05.42-225x300.jpg\" alt=\"2014-06-18 12.05.42\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-18-12.05.42-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-18-12.05.42-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<br \/>\n3 lemons, juiced plus 1 more for serving<br \/>\n2 teaspoons honey<br \/>\n1 cup fresh dill, chopped (dried ok, too)<br \/>\n1\/2 cup extra-virgin olive oil<br \/>\n1\/4-1\/3 cup mayonnaise (optional)<br \/>\nsea salt and freshly ground black pepper (I use<a href=\"http:\/\/www.mccormick.com\/Spices-and-Flavors\/Herbs-and-Spices\/Grinders\/Lemon-and-Pepper-Seasoning-Grinder\" target=\"_blank\">\u00a0this<\/a> lemon-pepper seasoning)<br \/>\n1 box (1#) rotini pasta (I used gluten free)<br \/>\n1 # frozen cooked tiny shrimp, defrosted<br \/>\n2 cups grape tomatoes, halved<br \/>\n1 large seedless cucumber, diced<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>in a large bowl, whisk together the juice of the lemons, the honey and chopped dill. slowly whisk in the olive oil until the dressing is emulsified (or use your blender or food processor). season well with salt and pepper<\/li>\n<li>add the shrimp to the vinaigrette, toss to coat well and set aside to marinate<\/li>\n<li>cook pasta according to package directions;
