it&#8217;s not about exact ingredients. \u00a0You can add or subtract as you like. \u00a0It&#8217;s about CRUNCH! \u00a0And that&#8217;s what you get in this <strong>Crunchy Chopped Salad<\/strong>!<\/p>\n<p>I know that chips aren&#8217;t great for me. \u00a0I usually don&#8217;t crave them, and I make sure I don&#8217;t keep them in the house (because as a stay-at-home mom, you DO eat whatever is in the pantry!) \u00a0But sometimes you just get that urge for something kind of salty and crunchy. \u00a0I make this salad instead. \u00a0Is it the same? \u00a0Of course not! \u00a0(Otherwise I&#8217;d call it <em>Doritos<\/em> Salad!) \u00a0But this satisfying, fun-to-eat dish \u00a0scratches that itch for me, and maybe it will for you too.<\/p>\n<p>If you need a break from\u00a0lettuce, try this. \u00a0If you have lots of singleton vegetables in your crisper drawer, try this. \u00a0If you want something fresh and different for your next cookout, try this!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Crunchy Chopped Salad<\/strong><\/span><\/p>\n<p>(Serves four as a side dish)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>6 baby carrots<\/li>\n<li>1 bunch radishes, trimmed<\/li>\n<li>3 stalks celery, trimmed<\/li>\n<li>2 Persian cucumbers, or one large cucumber<\/li>\n<li>1\/2 red bell pepper<\/li>\n<li>1\/2 yellow bell pepper<\/li>\n<li>2 green onions<\/li>\n<li>2 cloves garlic<\/li>\n<li>juice of 1 lemon or lime<\/li>\n<li>2 or 3 drops of honey<\/li>\n<li>salt and pepper<\/li>\n<li>1\/4 to 1\/3 cup olive oil<\/li>\n<li>2 avocados<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Wash and trim all your veggies. \u00a0Cut them all into medium-small pieces. \u00a0This is up to you, but for example, I cut the peppers into 1\/2&#8243; square pieces. \u00a0The radishes, cucumbers, carrots, and celery all get sliced vertically, then cut into 1\/4&#8243; slices. \u00a0If you dice everything too small, you won&#8217;t get the crunchiness. \u00a0If you cut everything too large, you&#8217;ll only get one or two veggies on your spoon at a time. \u00a0Experiment and see what size you like best. \u00a0If you are using a large cucumber, you may want to peel off the waxy skin and scoop out the seeds. \u00a0I like Persians because they are thin-skinned and have very little squishy gel around the seeds. \u00a0Pile all your chopped veggies into a big bowl and toss. \u00a0Beautiful, right?<\/li>\n<li>In a little food processor, blend up your garlic, lemon juice, honey, salt and pepper, and 1\/4 cup olive oil. \u00a0Taste and dilute with more oil if you like.<\/li>\n<li>To serve, dish the salad into a bowl and drizzle liberally with dressing. \u00a0For each serving, dice half of an avocado and place it on top (otherwise it gets smushed.) \u00a0Eat this salad with a big soup spoon so you get a little of each vegetable in every bite!<\/li>\n<\/ol>\n<p>If you have leftovers, you can mix in a can of tuna the next day. \u00a0It&#8217;s wonderful!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a style=\"color: #336699;\" href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
