they put in cartons is all watery, and you need the high fat content of the canned stuff. \u00a0Trader Joe&#8217;s has both canned coconut milk and coconut cream, or you can try an Asian market or online. \u00a0Next thing you need is curry. \u00a0You can use curry paste; I just used curry powder and it was lovely. \u00a0You&#8217;ll need an 8-ounce package of mushrooms, any kind &#8211; I used regular button mushrooms, but shiitakes or creminis would be nice too, and give it a stronger flavor. \u00a0And last is this beauty:<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/Chinese-Broccoli-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20042\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/Chinese-Broccoli-resize-225x300.jpg\" alt=\"Chinese Broccoli resize\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/Chinese-Broccoli-resize-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/Chinese-Broccoli-resize-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/Chinese-Broccoli-resize.jpg 915w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>I buy it at the farmer&#8217;s market from a Vietnamese lady who tells me it&#8217;s called &#8220;Chinese broccoli&#8221;. \u00a0A little online research shows its real name is<a href=\"http:\/\/en.wikipedia.org\/wiki\/Kai-lan\"> kai lan<\/a>. \u00a0Its leaves are like spinach, and its cooked stems have the consistency of asparagus. \u00a0If you can&#8217;t find it, use spinach instead&#8230;although the Chinese broccoli has a stronger, more bitter flavor.<\/p>\n<p>I made this with whole chicken legs &#8211; skin, bones and all &#8211; but I think next time I&#8217;ll try it with just boneless, skinless thighs. \u00a0Chicken skin in the crockpot is not a nice thing &#8211; we actually peeled it off before we ate the Curry Chicken the first night because it just seemed kind of rubbery. \u00a0But I think the skin and bones do add to the stock for the stew the next day, so it&#8217;s up to you. \u00a0Either way, you get two healthy, delicious meals out of one crockpot &#8211; you can&#8217;t beat that!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Crockpot Curry Chicken<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 pounds whole chicken legs<\/li>\n<li>1 can of coconut cream, or use coconut milk (<strong>not<\/strong> low-fat)<\/li>\n<li>3 tablespoons curry powder or curry paste of your choice<\/li>\n<li>juice of 1 lemon or lime<\/li>\n<li>1 tablespoon salt<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a large crockpot, set the time for 8 hours on low or 4-6 on high. \u00a0Put the chicken legs on the bottom.<\/li>\n<li>Mix together the coconut cream, curry, lemon juice and salt. \u00a0Pour over the chicken and stir to combine.<\/li>\n<li>Cook until a thermometer reads 180*F. \u00a0Remove chicken legs from the pot and cover them with foil. \u00a0Pour the coconut broth into a large pan and simmer for about 15 minutes. \u00a0It will reduce a little. \u00a0Serve chicken legs with coconut broth.<\/li>\n<\/ol>\n<p>Now, at this point, I had 2 very large legs leftover and about a cup of coconut broth. \u00a0I put them together in a Tupperware container. \u00a0Then the next day, I made&#8230;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Curry Chicken Stew<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 tablespoon butter, coconut oil or olive oil<\/li>\n<li>8 ounces mushrooms, quartered<\/li>\n<li>1 pound Chinese broccoli, cut into 2-inch pieces \u00a0(or use fresh spinach)<\/li>\n<li>2 large cooked chicken legs (or use 1 pound of chicken thighs)<\/li>\n<li>leftover coconut broth &#8211;
