{"id":19990,"date":"2014-06-02T00:30:19","date_gmt":"2014-06-02T04:30:19","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=19990"},"modified":"2014-06-01T23:56:13","modified_gmt":"2014-06-02T03:56:13","slug":"shrimp-corn-black-bean-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/06\/02\/shrimp-corn-black-bean-salad\/","title":{"rendered":"Shrimp with Corn and Black Bean Salad"},"content":{"rendered":"<p>So, remember last week I shared my husband\u2019s epiphany in realizing he really does like Tex-Mex, Cal-Mex, Mexican type foods? \u00a0Ok&#8230;n-o-w he is requesting it as part of our weekly menu! \u00a0 The following is an easy, quick-to-make weekday supper that is healthy but oh-so-yummy! \u00a0First\u00a0dish is\u00a0a Black Bean and Corn Salad along with some delicious Tex-Mex influenced shrimp. \u00a0I am definitely going to keep this in the summertime meal rotation&#8230;light, refreshing, and won&#8217;t heat up the kitchen!<\/p>\n<h3>Black Bean and Corn Salad<\/h3>\n<h3><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-15.44.41.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-19994\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-15.44.41-300x225.jpg\" alt=\"2014-06-01 15.44.41\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-15.44.41-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-15.44.41.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/h3>\n<p><span style=\"text-decoration: underline; \"><strong>ingredients<\/strong><\/span>:<br \/>\n2 cups corn (fresh or frozen)<br \/>\n1\/2 cup cucumber, peeled, small diced<br \/>\n1 small jalapeno, seeded and finely diced (optional)<br \/>\n1 (15 ounce) can black beans, drained and rinsed<br \/>\n1\/2 cup sweet onion, finely diced<br \/>\njuice of 1\/2 large lime<br \/>\n1 teaspoon olive oil<br \/>\nsea salt and freshly ground pepper, to taste<\/p>\n<p><span style=\"text-decoration: underline; \"><strong>salad directions<\/strong><\/span>:<br \/>\ncombine all ingredients; pour into a storage bag or container and refrigerate for at least 30 minutes for flavors to combine.<\/p>\n<h3>Tex-Mex Shrimp<\/h3>\n<p><span style=\"text-decoration: underline; \"><strong>marinade ingredients<\/strong><\/span>:<br \/>\njuice of 1\/2 large lime<br \/>\n1 tablespoon olive oil<br \/>\n1 tablespoon chipotle chili powder<br \/>\n1 heaping tablespoon chopped garlic<br \/>\n1 teaspoon honey<br \/>\npinch of cayenne pepper (optional)<br \/>\nsea salt to taste (I used a lemon-pepper-salt combo)<br \/>\n1\/2 # medium to large shrimp, tails removed<\/p>\n<p><strong><span style=\"text-decoration: underline;\">marinade directions<\/span><\/strong>:<\/p>\n<ul>\n<li>simply whisk ingredients together in a medium-sized glass bowl<\/li>\n<li>add in shrimp and refrigerate for 30 minutes.<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">To finalize your dish<\/span><\/strong><\/p>\n<ul>\n<li>heat a saute pan over medium-high heat<\/li>\n<li>pour shrimp and some of the marinade into the pan<\/li>\n<li>cook for 1-2 minutes \u2018til starting to turn pink<\/li>\n<li>immediately flip over and cook other side for additional 2 minutes<\/li>\n<li>remove from heat; do not over cook<\/li>\n<\/ul>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-19.45.41.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-19993\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-19.45.41-300x225.jpg\" alt=\"2014-06-01 19.45.41\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-19.45.41-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/06\/2014-06-01-19.45.41.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline; \"><strong>To serve<\/strong><\/span>:<br \/>\nI warmed up a couple of gluten free flour tortillas, and placed them (folded up) on each plate with a portion of the Black Bean and Corn Salad and some of the marinated shrimp. On the side, we also had some Spanish rice, fresh guacamole, and a dollop of sour cream.<\/p>\n<p>This would also be delish (and low-carb) served with lettuce leaves to spoon the shrimp and salad into and roll up.
