{"id":19881,"date":"2014-05-26T12:57:51","date_gmt":"2014-05-26T16:57:51","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=19881"},"modified":"2014-05-26T12:59:02","modified_gmt":"2014-05-26T16:59:02","slug":"chicken-enchiladas-gluten-free","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/05\/26\/chicken-enchiladas-gluten-free\/","title":{"rendered":"Chicken Enchiladas (Gluten-free)"},"content":{"rendered":"<p>Who loves Tex-Mex food? \u00a0Raise your hand! \u00a0Me, too! \u00a0And the crazy thing\u2014my husband, Robert, has said for years now, \u2019Um, no thanks!\u2019 \u00a0Somehow he got it in his head that all Mexican, Tex-Mex, Cal-Mex food had to be spicy. \u00a0(And Robert does not enjoy SPICY!) \u00a0So, recently I have been preparing an occasional dish to try and introduce him to one of my most favorite cuisines&#8230;successfully, I might add! \u00a0Ol\u00e9!<\/p>\n<p>Recently, Aldi (Do you shop there? \u00a0You should!) \u00a0introduced a new line of gluten-free products&#8230;really quite good, very good quality! \u00a0One of the items is a \u2018flour\u2019 tortilla. \u00a0They are amazing&#8230;just like a really good wheat flour tortilla that I remember (soft, pliable, thin) from before we went gluten free. \u00a0So I went back and bought not one, not two, but three packages&#8230;oh the options! \u00a0These Chicken Enchiladas were my first choice! \u00a0I prepared them with a tomatillo salsa (oh, yum!) but certainly they can be made with traditional salsa equally well. \u00a0\u00a0(And, please, make this recipe using traditional ingredients (NOT gluten-free) as well! \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/2014-05-22-20.25.09.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-19883\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/2014-05-22-20.25.09-300x225.jpg\" alt=\"2014-05-22 20.25.09\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/2014-05-22-20.25.09-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/2014-05-22-20.25.09.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\">Chicken Enchiladas<\/h3>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<br \/>\n1\/2 red pepper, sliced thin<br \/>\n1\/2 red pepper, sliced thin<br \/>\n1 medium sweet onion, sliced into halfmoons<br \/>\n2 tablespoons olive oil<br \/>\nsea salt, freshly ground pepper<br \/>\n2 tablespoons (divided) chipotle chili powder<br \/>\n3 cups cooked chicken, shredded<br \/>\n2+ cups enchilada sauce \u00a0**gf recipe below<br \/>\n1 cup frozen corn (defrosted)<br \/>\n1 cup tomatillo salsa (or traditional salsa)<br \/>\n1 can (15 ounces) black beans, rinsed and drained<br \/>\n1 cup sour cream<br \/>\n1 cup shredded Mexican-blend cheese<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 350<\/li>\n<li>lightly oil the bottom of a large (9 x 13) baking pan, and pour in \u00bd cup of the enchilada sauce<\/li>\n<li>saute the veggies with the olive oil for 7 or 8 minutes \u2018til softened. \u00a0season with salt, pepper, and 1 tablespoon of the chipotle chili powder. \u00a0set aside<\/li>\n<li>in a large mixing bowl, combine the shredded chicken, corn, black beans, sour cream, 1 tablespoon chili powder, \u00bd cup of the enchilada sauce, \u00bd cup of the salsa, \u00bd cup of the shredded cheese; mix well<\/li>\n<li>pour 1 cup of the enchilada sauce into a shallow saute pan (or a bowl)<\/li>\n<li>now, set up a little production line with the baking pan, the chicken mixture, the pan with enchilada sauce, and an empty plate&#8230;this gets messy; you\u2019ll thank me for it! \u00a0\ud83d\ude09<\/li>\n<li>take 1 tortilla, run it through the enchilada sauce to coat; place it on the plate. \u00a0take 1 good handful (1\/3-1\/2 cup) of the chicken mixture and spread it down the center of the tortilla; roll the tortilla up; place in baking pan with seam-side down. \u00a0repeat \u2018til all tortillas are filled.
