\u00a0How about try it in pesto? \u00a0This recipe for <strong>Shrimp with Cilantro Pesto<\/strong> was a big hit at dinner last night!<\/p>\n<p>You can cook the shrimp however you like. \u00a0Here, we just pan-fried them quickly with salt and pepper, and let the pesto do the heavy lifting in the flavor category. \u00a0This comes together so quick it&#8217;s laughable. \u00a0Make the pesto whenever you like &#8211; even the day before &#8211; and keep in the fridge until you are ready to eat. \u00a0We ate this with roasted baby potatoes and roasted broccoli. \u00a0The pesto was especially delicious on the potatoes. \u00a0Try it and see!<\/p>\n<p><strong><span style=\"text-decoration: underline\">Shrimp with Cilantro Pesto<\/span><\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large bunch cilantro<\/li>\n<li>1\/3 cup toasted pepitas<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>juice of 1 lemon or lime<\/li>\n<li>1\/3 cup olive oil<\/li>\n<li>salt and pepper<\/li>\n<li>1 pound shrimp, peeled<\/li>\n<li>1 tablespoon olive oil<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Wash and shake the cilantro and trim about half an inch off the bottom of the stems. \u00a0Place them in the bowl of a food processor. \u00a0Blend with the pepitas, garlic, lemon juice, and olive oil. \u00a0Taste and add salt and pepper to your liking. \u00a0Pour into a bowl and store in the fridge until ready to use.<\/li>\n<li>Prepare the shrimp: peel the shell off, remove the tail, and de-vein. \u00a0Season with salt and pepper and drizzle with olive oil. \u00a0Heat a pan on medium-high, and quickly saut\u00e9 the shrimp. \u00a0They will only take about 2 minutes per side &#8211; don&#8217;t let them get tough and overdone!
