{"id":19563,"date":"2014-05-09T00:30:46","date_gmt":"2014-05-09T04:30:46","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=19563"},"modified":"2014-05-09T00:15:16","modified_gmt":"2014-05-09T04:15:16","slug":"crockpot-pork-tacos","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/05\/09\/crockpot-pork-tacos\/","title":{"rendered":"Crockpot Pork Tacos"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/Crockpot-Pork-Tacos-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-19564 size-medium\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/Crockpot-Pork-Tacos-resize-300x224.jpg\" alt=\"Crockpot Pork Tacos resize\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/Crockpot-Pork-Tacos-resize-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/Crockpot-Pork-Tacos-resize-1024x767.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/05\/Crockpot-Pork-Tacos-resize.jpg 1123w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>If your idea of Mexican food is based on the dollar menu at Taco Bell, you are in for a treat! \u00a0Authentic Mexican food is easy to make at home and is quite healthy for you. \u00a0This Monday was Cinco de Mayo, so I made these <strong>Crockpot Pork\u00a0Tacos<\/strong>, and they were muy delicioso!<\/p>\n<p>In Mexico, and in authentic Mexican restaurants here in California, there is no shredded lettuce or cheddar cheese. \u00a0Tacos are simple and small and are often eaten on-the-go, so they&#8217;re not all covered in sauces or messy vegetables. \u00a0Chopped onions and cilantro are usually the only thing you&#8217;ll see, with a squeeze of lime. \u00a0I added avocado to mine because it pairs great with the pork. \u00a0It&#8217;s a traditional accompaniment to tacos and adds a creamy note to balance out the sharpness of the raw onions.<\/p>\n<p>As far as the pork goes, I usually use a big shoulder roast, but you can use whatever pork roast you like. \u00a0The seasoning is simple here, but you can spice it up as much as you want. \u00a0Try adding a can of chipotles in adobo sauce for a smoky flavor, or a jar of salsa verde to the crockpot.<\/p>\n<p>Finally, tacos are kind of like sandwiches. \u00a0You can make a thousand different kinds of sandwiches and all are tasty. \u00a0But if you only ever eat a turkey sandwich, you may never know how much you&#8217;d love a Reuben. \u00a0So: \u00a0if taco night at your house always means ground beef and diced tomatoes, you owe it to yourself to try something new. \u00a0Ready? \u00a0Vamanos!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Crockpot Pork Tacos<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large pork roast, 2 or 3 pounds<\/li>\n<li>2 tablespoons salt<\/li>\n<li>1 teaspoon garlic powder<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>1\/2 cup fresh cilantro, roughly chopped<\/li>\n<li>1\/2 red onion, diced<\/li>\n<li>1 or 2 avocados, sliced or diced<\/li>\n<li>corn tortillas<\/li>\n<li>lime or lemon wedges, to serve<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Combine the salt, garlic powder, and cumin, and rub all over the outside of the pork roast. \u00a0Place in your crockpot and cook for 8 hours on low. \u00a0When done, the pork should pull apart easily.<\/li>\n<li>Warm up your tortillas: \u00a0I wrap a few tortillas in a clean, damp dish towel and microwave for 20 seconds. \u00a0If you try to use them cold, they&#8217;ll crack!<\/li>\n<li>Shred your pork with two forks, or chop roughly. \u00a0To serve, put about 1\/3 cup of shredded pork in the center of a tortilla. \u00a0Sprinkle with cilantro, onion, and avocado. \u00a0Squeeze lime over taco. \u00a0Eat several. \u00a0Don&#8217;t wipe your hands on your pants!<\/li>\n<\/ol>\n<p>If you have leftovers, and I always do, I usually skip the tortilla and just eat the pork, reheated in the microwave, covered in cilantro, onions, and avocado. \u00a0Skip the carbs, and squeeze lots of lime!<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a style=\"color: #336699;\" href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If your idea of Mexican food is based on the dollar menu at Taco Bell, you are in for a treat! \u00a0Authentic Mexican food is easy to make at home and is quite healthy for you. \u00a0This Monday was Cinco de Mayo, so I made these Crockpot Pork\u00a0Tacos, and they were muy delicioso!
