And then I noticed this mound of small brownish-purplish balls filling the case beneath the broccoli&#8230;what? \u00a0They were baby beets! \u00a0Not on my list&#8230;but who cares? AND (thank You, Lord!) they were only 99cents per pound! So, 3 pounds came home with me!<\/p>\n<p>I knew that I wanted to feature them in our <em>At Home w\/ GCH blog<\/em> today, but I had to come up with a different way to prepare them. It couldn\u2019t be my favorite way to serve (ok, eat!) beets\u2014roasted over baby greens with goat cheese! We\u2019ve already done that <a href=\"http:\/\/girlfriendscoffeehour.com\/2014\/03\/03\/roasted-beet-salad-goat-cheese-medallions\/\" target=\"_blank\">here<\/a>\u00a0&#8230; so I perused the Internet and found a number of recipes for glazed beets. Here\u2019s my version; enjoy!<\/p>\n<h3 style=\"text-align: center;\">Glazed <span style=\"color: #800000;\">Baby Beets<\/span> and <span style=\"color: #ff6600;\">Carrots<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-27-19.58.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-19318\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-27-19.58.42-225x300.jpg\" alt=\"2014-04-27 19.58.42\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-27-19.58.42-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-27-19.58.42-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n1 pound baby beets, peeled<br \/>\n1\/2 pound small frozen carrots (we use these from Trader Joe\u2019s)<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/tjsparisiennecarrots.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-19317\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/tjsparisiennecarrots-200x300.jpg\" alt=\"tjsparisiennecarrots\" width=\"200\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/tjsparisiennecarrots-200x300.jpg 200w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/tjsparisiennecarrots.jpg 600w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a><br \/>\n2 cups juice or chicken broth (I used mango 100% juice)<br \/>\n1 tablespoon honey<br \/>\n3 tablespoons white balsamic vinegar (I used honey balsamic)<br \/>\nsea salt, freshly ground black pepper<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Steam beets and carrots \u2018til almost done (when a thin-bladed knife goes through with just a bit of resistance).<\/li>\n<li>Set aside the (almost cooked) veggies, and dump the water out of the pan.<\/li>\n<li>Into the same pan, add the liquid of your choice and bring to a boil.<\/li>\n<li>Pour the veggies back into the pan along with the honey. Stir \u2018til combined and bring to a boil.<\/li>\n<li>Reduce heat so that the liquid is gently simmering.<\/li>\n<li>Continue to cook veggies for 5 minutes or so, spooning the liquid over them occasionally so that they get good and coated.<\/li>\n<li>Stir in the balsamic vinegar and simmer for another five minutes.<\/li>\n<li>Remove pan from heat, and pour into a serving bowl scraping in all of the liquid, too.<\/li>\n<li>Season well with sea salt and freshly ground pepper.<\/li>\n<li>Makes approximately 4 servings.<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p>God loves you! \u00a0<span style=\"color: #99cc00;\"><span style=\"color: #ff6600;\">\u2665<\/span> \u00a0<\/span>(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #99cc00;\"><span style=\"color: #ff6600;\">\u2665\u00a0<\/span>\u00a0<\/span>coleen<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Wait \u2018til you see what I found at the grocery store!
