There are a few things that are constants: the egg hunt including the gold glitter egg with the $5 bill inside, the Polish kielbasa and Easter cheese &#8220;<a href=\"http:\/\/www.globalgourmet.com\/destinations\/poland\/easterch2.html#axzz2zUu60dpD\" target=\"_blank\">\u00a0citic <\/a>&#8220;platter, and the array of side dishes to accompany the ham my Dad bakes. This year\u2019s buffet lineup included: Kassia\u2019s gluten-free mac and cheese, Betsy\u2019s coleslaw, Kelly\u2019s apple&amp;spinach salad, Brigit\u2019s layered salad, scalloped potatoes, my broccoli craisin salad, a pickle&amp;olive plate, applesauce, gluten free brioche, croissants, and ambrosia salad. It looked colorful and was so very delicious&#8230;made with love!<\/p>\n<p>So, when it fell to me to prepare the ambrosia salad, I decided to do a remix and make it in my p.o.v.\u2014healthy but oh-so-yummy! Here\u2019s how:<\/p>\n<ul>\n<li>no canned fruit<\/li>\n<li>no Cool-whip<\/li>\n<li>no maraschino cherries<\/li>\n<\/ul>\n<p>This recipe is<em><strong> full<\/strong> <\/em>of fresh fruit. \u00a0Each time you prepare this dish, you could include a different combination of fruit ingredients! \u00a0This fruit salad doesn\u2019t need much sugar added to the whipped cream component because of all the yummy sweetness of the fresh fruit.<br \/>\nAdjust the quantity of the ingredients based on the number of servings you are aiming for! \u00a0We had 30 hungry eaters (not including the babies) so I went BIG on the amounts. \u00a0Also, \u2018some\u2019 people don\u2019t enjoy the shredded coconut component of this salad (crazy, right?)&#8230;so I\u2019ve included it as an optional ingredient. \u00a0<strong><span style=\"color: #99cc00;\">Enjoy!<\/span><\/strong><\/p>\n<p><strong>Ingredients:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-20-09.44.01.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-19209\" alt=\"2014-04-20 09.44.01\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-20-09.44.01-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-20-09.44.01-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-20-09.44.01-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/strong><br \/>\n<span style=\"text-decoration: underline;\">Whipped Cream:<\/span><br \/>\n1\/2 quart heavy cream<br \/>\n2 teaspoons almond (or vanilla) extract<br \/>\n4 tablespoons powdered sugar<\/p>\n<p><span style=\"text-decoration: underline;\">Fruit Salad:<\/span><br \/>\n1 pineapple<br \/>\n1 cantaloupe (or other melon)<br \/>\n1 pint blueberries<br \/>\n1 pint blackberries (or raspberries)<br \/>\n1 pound strawberries<br \/>\n3 or 4 apples (I used Granny Smith)<br \/>\n5 or 6 clementines<br \/>\n3-4 bananas<br \/>\n2 pounds grapes<br \/>\n2 cups mini marshmallows<br \/>\n1 cup broken pecan (or walnuts)<br \/>\n1 cup Greek yogurt, I used vanilla<br \/>\nwhipped cream (recipe above)<br \/>\n1 cup + \/ &#8211; shredded coconut (optional)<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Once the cream is whipped and sweetened, fold in the yogurt, blending together very well. Keep in the refrigerator \u2018til ready to use.<\/li>\n<li>Prepare the fruit&#8230;wash and dry the berries and grapes; peel and core the pineapple; wash, core the apples; peel and section the tangerines; peel and scoop out the seeds in the melon.<\/li>\n<li>Cut and chop the prepared fruit remembering to keep all pieces bite-size! I always use a melon baller for any melon; the rounded shapes are so much more fun and interesting! \u00a0Prep the bananas last, sprinkling w\/a little lemon juice or pineapple juice, to prevent browning.<\/li>\n<li>Place into a very large mixing bowl (or just use your largest stockpot).<\/li>\n<li>Scatter the mini-marshmallows and the nuts across the top.<\/li>\n<li>Pour the whipped cream mixture over top and fold together, gently but thoroughly.
