Dill is a lovely thing to grow in a windowbox, if you can, or in your garden, because it goes with so many other flavors and cuisines. \u00a0If you have leftover dill after making the tzatziki, use it on fresh or smoked salmon.<\/p>\n<p>Tzatziki is just a fancy way to say &#8220;yogurt dip.&#8221; \u00a0 It is found in Greek and Mediterranean dishes, and goes well with all grilled meats&#8212;chicken, beef, lamb, salmon&#8212;as well as vegetarian dishes like falafel. \u00a0Blend this up in your food processor in five minutes, and enjoy for lunch or a light dinner tonight!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Tzatziki Wrap<\/strong><\/span><strong>\u00a0<\/strong>(Makes two wraps)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/2 cup plain yogurt (Greek yogurt or regular. \u00a0Avoid nonfat as the texture is too runny)<\/li>\n<li>1 big handful dill sprigs, any tough parts trimmed away<\/li>\n<li>juice of 1\/2 lemon<\/li>\n<li>salt and pepper<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>1\/2 large cucumber, peeled and seeded<\/li>\n<li>1\/2 red bell pepper<\/li>\n<li>1\/2 green bell pepper<\/li>\n<li>1 cup baby spinach, or a few leaves of romaine lettuce<\/li>\n<li>1 cooked chicken breast<\/li>\n<li>tortillas or pita bread for wrapping<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Make the tzatziki: \u00a0In a food processor or blender, blend the yogurt, dill, lemon juice, salt, pepper, and garlic together. \u00a0Cut the half a cucumber in half again, and add one half to the blender and combine. \u00a0(You should now have one-quarter of a cucumber left. \u00a0Math!) \u00a0Refrigerate the tzatziki until ready to use.<\/li>\n<li>Slice the peppers and cucumber into very fine strips. \u00a0If you are using romaine lettuce, wash and dry the leaves and stack them on a cutting board. \u00a0Cut the leaves into fine strips. \u00a0Mix the peppers, cucumber, and lettuce in a large bowl and toss to combine.<\/li>\n<li>Very thinly slice the chicken breast. \u00a0Prepare your tortilla or pita bread for filling. \u00a0(I always warm up tortillas in the microwave, covered with a damp paper towel, so they&#8217;re pliable and won&#8217;t break.) \u00a0Fill tortilla with chicken breast slices, vegetables, and a big drizzle of tzatziki. \u00a0Roll up and eat, with more tzatziki if you like.<\/li>\n<\/ol>\n<p>Cutting carbs, or do you have leftover wrap filling? \u00a0Toss with tzatziki and eat it like a salad! \u00a0It also goes great as a dip&#8212;try with carrots.<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>What a fun word to say: \u00a0Tzatziki! \u00a0With spring in full swing now, I am in love with using fresh herbs in as many ways possible. \u00a0This recipe for my Tzatziki Wrap uses a small handful of dill.
