And we baked them up as a dozen standard size muffins and 3 dozen mini-muffins. \u00a0In either size, they baked beautifully!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-05-16.45.411.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18942\" alt=\"kayliemuffins\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-05-16.45.411-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-05-16.45.411-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-05-16.45.411-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nThis recipe (adapted from a similar one over at the <a href=\"http:\/\/www.thespunkycoconut.com\/\" target=\"_blank\">Spunky Coconut<\/a> &#8211; one of my very favorite gluten free, refined sugar free blogger\/bakers) fits well into our healthy but-oh-so-yummy point of view:<\/p>\n<ul>\n<li>uses honey or agave nectar and liquid stevia rather than refined white sugar<\/li>\n<li>are gluten free with protein-rich almond flour and a bit of brown rice flour replacing wheat flour<\/li>\n<\/ul>\n<h4 style=\"text-align: center;\"><span style=\"color: #b6202f;\">Strawberry Muffins<\/span> (make approximately 14)<\/h4>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-04-14.56.51.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18943\" alt=\"2014-04-04 14.56.51\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-04-14.56.51-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-04-14.56.51-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/04\/2014-04-04-14.56.51.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n2 cups almond flour<br \/>\n1\/2 cup brown rice flour<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/2 teaspoon finely ground sea salt<br \/>\n1 cup fresh strawberries<br \/>\n1\/2 cup coconut oil, liquified<br \/>\n1\/3 cup honey or agave nectar<br \/>\n6-8 drops vanilla liquid stevia<br \/>\n1\/2 teaspoon vanilla extract<br \/>\n3 large eggs, at room temperature<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 350<\/li>\n<li>line muffin cups with paper liners<\/li>\n<li>wash and dry strawberries; chop finely (not mushed, but small)<\/li>\n<li>sift together the dry ingredients; set aside<\/li>\n<li>pour liquified coconut oil, sweeteners, and extract into bowl<\/li>\n<li>using electric mixer, beat for one minute, then add eggs one at a time<\/li>\n<li>slowly add dry ingredients, beating just &#8217;til thoroughly combined<\/li>\n<li>by hand, gently fold in strawberries<\/li>\n<li>scoop into muffin cups, filling almost to brim<\/li>\n<li>bake at 350 degrees for about 25 minutes<\/li>\n<li>remove from muffin pan onto cooling rack; allow to completely cool<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Tip<\/span><\/strong>: Coconut oil needs to liquify in order to be blended into a batter. Depending on the time of year (summer..no problem; winter&#8230;a problem) you might need to warm it up. You could either scoop out the required amount of coconut oil and place it in a glass measuring cup on your stovetop as the oven preheats. Or it can be microwaved for approximately 30+ seconds (depending on the quantity you need) and then stirred.
