{"id":18733,"date":"2014-03-28T00:30:17","date_gmt":"2014-03-28T04:30:17","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=18733"},"modified":"2014-03-28T00:20:44","modified_gmt":"2014-03-28T04:20:44","slug":"sweet-pea-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/03\/28\/sweet-pea-soup\/","title":{"rendered":"Sweet Pea Soup"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Sweet-Pea-Soup-resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-18735\" alt=\"Sweet Pea Soup resize\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Sweet-Pea-Soup-resize.jpg\" width=\"539\" height=\"404\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Sweet-Pea-Soup-resize.jpg 899w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Sweet-Pea-Soup-resize-300x224.jpg 300w\" sizes=\"auto, (max-width: 539px) 100vw, 539px\" \/><\/a><\/p>\n<p>I call both of my girls &#8220;Sweet Pea.&#8221; \u00a0My Mom called me &#8220;Sweet Pea&#8221; too. \u00a0 So when I was working on a recipe to use up the last of my buttermilk and stumbled on this tempting combination of peas and mint, I couldn&#8217;t help but give it a cute name: \u00a0<strong>Sweet Pea Soup<\/strong>!<\/p>\n<p>Peas and mint are a natural springtime match-up. \u00a0This soup comes together in half an hour, and with another half hour to chill, \u00a0it will be ready to eat. \u00a0I used both frozen peas and pea pods (which are all over my Farmer&#8217;s Market, and probably yours, too.) \u00a0If you can&#8217;t find pea pods, just double the frozen peas and use a full pound. \u00a0The recipe calls for you to strain the blended soup, which gives it a more silky, smooth texture. \u00a0You can skip this step if you are in a hurry, or if you like a little thicker body to your soup. \u00a0Either way I think you&#8217;ll love it, and so will all the &#8220;Sweet Pea&#8217;s&#8221; in your life!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Sweet Pea Soup<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 cup pea pods, any kind<\/li>\n<li>1 onion (sweet Vidalia would be nice, but I just used a regular white onion), chopped<\/li>\n<li>3 tablespoons butter<\/li>\n<li>8 ounces frozen peas<\/li>\n<li>2 cups chicken stock<\/li>\n<li>1 cup buttermilk<\/li>\n<li>1 handful mint leaves (save a few pretty ones for garnish)<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a large pot, heat the pea pods and onion in the butter. \u00a0Cook over medium heat for ten minutes until the onion is getting soft.<\/li>\n<li>Add the frozen peas and chicken stock. \u00a0Cook on medium for ten minutes.<\/li>\n<li>Turn off the heat. \u00a0Pour in buttermilk and mint. \u00a0Blend with an immersion blender, or transfer to a large blender and blend in batches until smooth. \u00a0Taste and add salt to your liking.<\/li>\n<li>Strain the soup through a mesh sieve (or not, your choice.) \u00a0Cool in the refrigerator for half an hour. \u00a0Serve chilled, with additional mint leaves for garnish.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I call both of my girls &#8220;Sweet Pea.&#8221; \u00a0My Mom called me &#8220;Sweet Pea&#8221; too. \u00a0 So when I was working on a recipe to use up the last of my buttermilk and stumbled on this tempting combination of peas and mint, I couldn&#8217;t help but give it a cute name: \u00a0Sweet Pea Soup!
