\u00a0I was hungry at lunchtime yesterday, so I opened my pantry. \u00a0I stared at the shelf for a good minute&#8230;eyes glazing over. \u00a0&#8220;There&#8217;s got to be something here, some combination of flavors that will fill and delight me&#8221; I thought. \u00a0And bingo! \u00a0Inspiration struck and I made these <strong>Italian Tuna Wraps<\/strong>.<\/p>\n<p>Okay, this is pretty much just tuna salad in a lettuce wrap. \u00a0But the addition of white beans makes it filling, contributes a creamy texture, and ups the fiber. \u00a0A handful of chopped parsley adds freshness. \u00a0This recipe serves two for lunch. \u00a0Or just do what I did, and put it in the fridge for tomorrow&#8217;s lunch. \u00a0It will still taste great the next day!<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Italian Tuna Wraps<\/span><\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<\/p>\n<ul>\n<li>1 can of tuna<\/li>\n<li>1 can of white beans<\/li>\n<li>juice of 2 lemons<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>salt and pepper<\/li>\n<li>pinch of garlic powder<\/li>\n<li>1\/4 cup roughly chopped parsley<\/li>\n<li>Boston lettuce leaves (or other lettuce leaves of choice) for wrapping<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ol>\n<li>Drain the can of tuna and put it in a large bowl. \u00a0Drain the beans, rinse them in a strainer and then add them to the tuna.<\/li>\n<li>Toss the tuna mixture with the lemon juice and olive oil. \u00a0Season with salt, pepper, and garlic powder; toss again. \u00a0Add parsley and toss.<\/li>\n<li>To serve, wash and shake dry the lettuce leaves, and place a large spoonful of tuna in the lettuce. \u00a0Wrap and eat. \u00a0Couldn&#8217;t be easier!<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; I love it when a plan comes together!
