{"id":18350,"date":"2014-03-07T00:30:26","date_gmt":"2014-03-07T05:30:26","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=18350"},"modified":"2014-03-07T00:18:41","modified_gmt":"2014-03-07T05:18:41","slug":"brussels-sprouts-kale-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/03\/07\/brussels-sprouts-kale-salad\/","title":{"rendered":"Brussels Sprouts and Kale Salad"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Kale-and-Brussels-Sprouts-Salad-Resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18352\" alt=\"Kale and Brussels Sprouts Salad Resize\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Kale-and-Brussels-Sprouts-Salad-Resize-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Kale-and-Brussels-Sprouts-Salad-Resize-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Kale-and-Brussels-Sprouts-Salad-Resize-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/03\/Kale-and-Brussels-Sprouts-Salad-Resize.jpg 1011w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>Now you ladies know I <em><strong>love<\/strong> <\/em>a good salad. \u00a0I will eat a salad for breakfast &#8211; in fact, I&#8217;m finishing this big bowl of <strong>Brussels Sprouts and Kale Salad<\/strong> right now, with my morning coffee! \u00a0Raw Brussels sprouts&#8212;for breakfast?! \u00a0Yes indeed!<\/p>\n<p>I found this recipe on the <a href=\"http:\/\/www.bonappetit.com\/\" target=\"_blank\">Bon Appetit <\/a>website, which I tweaked to my liking. \u00a0The best thing about this salad, aside from the fact that it tastes good, is that it is so hearty. \u00a0I made it last night, had some for dinner, and it&#8217;s still good this morning! \u00a0But because it&#8217;s so sturdy, you&#8217;ll want to keep the nuts, fruit, and cheese separate until you&#8217;re ready to eat it. \u00a0You can sub any dried fruit you like for the cranberries: \u00a0cherries, blueberries, golden raisins, and diced dried apricot would be delicious too. \u00a0And if you don&#8217;t have toasted almonds, substitute pecans, walnuts, or hazelnuts. \u00a0Check it out, and report back with your chosen combination of flavors!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Brussels Sprouts and Kale Salad<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 bunch Tuscan\u00a0kale (also called dinosaur or lacinato kale)<\/li>\n<li>1\/2 pound large Brussels sprouts<\/li>\n<li>1 shallot (or 1\/4 red onion)<\/li>\n<li>juice of one large lemon<\/li>\n<li>1\/3 cup olive oil<\/li>\n<li>1\/2 teaspoon honey<\/li>\n<li>to serve: \u00a0almonds, dried cranberries, and Parmesan cheese<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Prepare kale: \u00a0Strip the leaf off the thick stem, then soak the leaves in cold water to remove any dirt.<\/li>\n<li>While the kale is soaking, prepare the Brussels sprouts: \u00a0cut off the stem end and any brown or wilted leaves. \u00a0Slice in half lengthwise, and lay down flat on the cut side. \u00a0Thinly slice each sprout half to create shreds. \u00a0Place shredded sprouts in a very large bowl.<\/li>\n<li>Dry the kale. \u00a0Grab a handful and sort of wad it up, then run your knife through the kale to shred it. \u00a0Add to the sprouts in the \u00a0bowl.<\/li>\n<li>In a small food processor, blend together the shallot, lemon juice, olive oil, and honey.<\/li>\n<li>Pour over the kale and mix with your hands. \u00a0I mean get in there! \u00a0Massage the dressing into the kale, squeezing it to soften everything up and get the dressing into all the sprouts and kale.<\/li>\n<li>To serve: \u00a0Dish salad into a bowl. \u00a0Take a handful of almonds and crush with a knife or in a mortar and pestle &#8211; just crack them lightly, you don&#8217;t need to pulverize them. \u00a0Add the cracked nuts and cranberries to the salad, then shred some Parmesan to go on top. \u00a0I shaved the block of Parmesan with my vegetable peeler, but you don&#8217;t have to do that if you don&#8217;t want. \u00a0Season with salt and pepper and serve.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Now you ladies know I love a good salad. \u00a0I will eat a salad for breakfast &#8211; in fact, I&#8217;m finishing this big bowl of Brussels Sprouts and Kale Salad right now, with my morning coffee! \u00a0Raw Brussels sprouts&#8212;for breakfast?! \u00a0Yes indeed!
